MIXED VEGETABLE PULAO WITH COCONUT MILK | ONE POT MEALS | RICE VARIETIES

Ingredients
Basmati Rice-2cups
carrot-2chopped
green capsicum-1chopped
potato-1chopped
cabbage-1cup
cauliflower-1cup florets
beans-6
corns-1/2cup
peas-1/2cup
tomato-1small
cashews-few
greenchilli-4-5
biryani masala powder-1tsp
bayleaf-2
cloves-4
cardamom-2
pepper-6
coconut milk-1cup
water-2cups
salt-to taste
gingergarlic paste-1tsp
haldi-1/4tsp
oil-1tsp
ghee-2tsp
coriander leaves-for garnish
mint leaves-1/2 cup

PREPARATION
1.wash and soak the rice atleast 3omints.
2.cut the vegetables and keep it aside.
3.heat the cooker add 1tsp ghee+1tsp oil fry the bay leaf,cloves and and cardamom for 20sec.
4.now add the vegetables one by one mix it.after 3mints add salt,ginger garlic paste,haldi,mint leaves,milk and water.put it in the med flame for 5mints.
5.when water is boiling add rice mix it.
6.pour these complete mixture into the rice cooker and switch on.
7.fry the cashews in 1tsp ghee.garnish with coriander leaves and fried cashews.
simple vegetable biryai ready
8.serve with curd raita or simple tomato rasam.
9.you can substitute the milk with curd.but coconut milk gives good flavour.
