GUTTI VANKAYA KURA/MASALA STUFFED BRINJAL GRAVY


HI..friends..a very happy and joyful good morning to you all..today iam posting a very super delicious and mouth watering gravy dish..that is GUTTI VANKAYA KURA..this is andhra famous and favourite dish..this dish can make with so many variations...this is my favourite dish...

INGREDIENTS
baby brinjals-10-12
oil-3tsps

FOR STUFFING
oil-1tsp+1tsp
peanuts-1cup
chana dal-1tsp
onions-2big chopped
urad dal-1tsp
sesame seeds-1tsp
tamarind-1lemon size
garlic cloves-4
salt-to taste
turmeric-1/4tsp
red chilli powder-2tsp
curry leaves-1spring
hing-a pinch
cashews-4

Preparation
wash and cut brinjal in +mark...dont cut it completely...fry in til tender and soft...

STUFFING PREPARATION
heat oil in a pan fry the above stuffing ingredients one by one in low flame,blend them into fine powder..
add water and make into a fine paste..
stuff this masala in fried brinjals..
now heat again a pan add 1tsp of oil arrange the stuffed brinjals..
keep the it in the low flame..and fry for 5mins...
add remaining masala paste and 1cup of water..check the salt...add little bit salt again...
let it boil in low flame for 10 mints..
when the gravy starts leaving oil on top off the flame...
serve hot with whits rice with combination of papad and dal....

FRIED STUFFING INGS
FRY THE BRNIJALS TIL SOFT AND TENDER
ADD SPICES TO GRINDED STUFF
ADD TAMARIND PASTE
ADD WATER
FILL THE STUFF IN BRINJALS
COOK IN LOW FLAME BYADDING WATER

READY TO SERVE
