Ingredients
brinjals-5(small one)
tomatoes-2big
onion-1
chilli powder-2tsps
salt-to taste
garam masala-1tsp
coriander powder-1tsp
curry leaves-few
ginger garlic paste/GGP-1tsp
oil-2tsps
cumin-1tsp
heat oil in kadai and add cumin..after it crackles add in onions,GGP,and fry til light brown......
add in chopped brinjals and mix once........
after 2minutes add in chilli powder,salt,garam masala and cook in medium flame for
3minutes........
now add chopped tomatoes and mix well.
again cover with lid and cook for 3minutes.....
after the tomatoes are mushy add coriander powder and cilantro.off the flame.......
serve with rice and rasam...........

My hubby love brinjal & this is his kind of dish. We only can get frozen brinjal from Asian store here. And they're not that tasty as the fresh one too! Nevertheless I'll try out this recipe of yours! Looks really tempting! :)
