PUMPKIN PULUSU/GUMMADIKAYA PULUSU

We all know that PUMPKIN is a very healthy vegetable... I tried this time pulusu (means pumpkin in tamarind extract) for the first time............tastes best with rice........


Ingredients

pumpkin pieces-2cups
onions-1big
tamarind paste-2tsps(mixed in 1cup of water)
besan flour/gram flour-1tsp
crushed garlic -1tsp
oil-4 tbsps
cumin+fenugreek powder(jeera menthi podi)-1tsp
red chii powder-1tsp
coriander powder-1tsp
jaggery-small piece
garam masala-1tsp
curry leaves-1sping
cilantro leaves-few
red chilli-3
salt-to taste
green chilli-2
mustard-1tsp
cumin-1tsp
bengal gram/chana dal/chanaga pappu-1tsp

Preparation

wash the chopped pieces well.......

in a pan add oil and fry well the red chilli,cumin,mustard,curry leaves,bengal gram.....................

add in this chopped onions,slit green chilli and fry for few minutes.........

add in pumpkin pieces and fry well in a very low flame...........

now add in this GGP,salt,turmeric,chilli powder mix well and fry for few minutes.......

now tamarind water,garam masala,jeer methi powder,coriander powder and boil it..........

after it turns to lightly thick add jaggery piece.

mix besan flour in few water and mix in the gravy........

let it boil for 5-8minutes..........add in cilantro and off the flame.........

healthy pumpkin pulusu is ready to taste............
