Dal khichdi | Mixed vegetable dal khichdi | South Indian lunch time recipes | indian vegetarian lunch recipes




Iam not a big fan of dals.even my H don`t likes dals......So I cook dals and sambars very rarely ...but last week one fine day for lunch decided to make khichidi..Generally,in khichdi uses moongdal,but here I went with toordal for a change.
It is one of the healthy and easy rice dish to cook.. Those who avoids to eat dals like my H can enjoy this meals...Is n`t it??......You can choose any of your choice vegetables...You can use even basmati rice too.....Anyway here goes the detailed recipe..Hope you guys like it........




Ingredients

rice- 1 cup
moong dal or toor dal -3/4 cup
potato-1 small
onion-1 small
tomato-1 small
green chilli-5
cauli flower florets-1 cup
beans-5
sweet corn-1/2 cup
frozen peas-1/2 cup
carrot-1
ginger garlic paste/GGP-2 tsps
mint leaves + coriander leaves -1 cup chopped + 1 cup chopped
salt-to taste
oil-2 tbsps + ghee- 1 table spoon
black pepper powder-1 tsp (optional)

TO TEMPER/Tadka

cardamom-2
cloves-3
cinnamon- 1"inch stick
cumin-1 tsp
dry red chili-1



Preparation

Wash rice well and keep aside..chop all veggies and set aside....soak dal for 15 minutes..

Heat oil in pressure cooker or any thick bottomed vessel add the ingredients which mentioned in the temper list..just saute those for half minute.....

add in all chopped veggies one by one and fry well..........add salt.......

add in  ginger garlic paste and mix well..cook this for 5 minutes.......

add in soaked dal+rice and again mix once....add in water and lets it boil and cook this till rice done........

serve hot with and raita.......without any side dish also it tastes good.....

I served with rasam and cucumber raita......
