CILANTRO PEANUT CHUTNEY


I usually make cilantro chutney and peanut chutney.sengihnampakgigi.......one day i saw this combination chutney in a cookery show.kenyit.i was impressed....and as soon as i tried it.....chutneys with hot steaming rice and a spoon ghee is a great combination na..senyumkenyit.....I just love this plate of meals...... anyway please please who loves chutneys like me give a try this....cium....and iam sure you people will remember me while having ur meals.......rindu



Ingredients

cilantro leaves chopped-2 bunches/3cups(approx)
peanuts-1cup
green chilli-4
red chilli-1
coriander seeds-1tsp
cumin-1tsp
urad dal/black gram-1tsp
hing-1 pinch
salt-to taste
oil-2tsps

Preparation

heat a kadai with oil add in cumin,black gram,hing,red chilli saute this for 30secs..........

add in green chilli,coriander,peanuts and fry for 3-5 minutes........

let it cool and grind into a fine paste.......

serve with rice or rotis.......

CARROT FRUIT SALAD

I like to try fruit salads by mixing with veggies..........This time i added carrot in fruit salad..here is the complete recipe.........

Ingredients

grated carrot-1cup
apple chopped-1cup
banana-2 chopped
dates-6 chopped
pear-1 cup chopped
honey-2tsps(opt)
Preparation

Mix all together chopped fruits and grated carrot.......

Add in honey and serve after 15 minutes...........

OATS BANANA SMOOTHIE


One more yummy and fresh smoothie which makes you cool and relax after tasted........here it goes..this will be the favourite one,to those who loves bananas and curd.

OREO GEMS COOKIES

This is my own one..........

Ingredients

all purpose flour-1cup
butter-3/4cup
milk-1/4cup
egg-1
oreo biscuits-12
baking powder-1tsp
baking soda-1/2tsp
sugar-3/4cup
gems-1/2cup
Preparation

beat the egg and add in milk,butter and sugar........

sift flour and add in baking powder,soda.........

break the oreo and add in flour.........finally add gems and mix well............

make it into a soft dough.......

preheat oven at 200c..

line a parchment paper in a baking tray..........

arrange the round shaped dough balls and bake for 30 minutes.......

cool on a wire rack and serve............

NOTE
because of adding milk they may not crunchy......but so soft and smooth.just melts in the mouth....

OATS PONGADALU

I angelthink you people know the pongadalurindu..but this time i tried pongadalu with oats....jelir.......very healthy and tasty.......senyum

Ingredients

oats-2cups
chanadal/bengal gram-1cup
pesara pappu/moong dal-1cup
urad dal/black gram-1cup
onions-2med size
green chili-4
curryleaves-1spring
ginger garlic paste/GGP-1tsp

preparation

soak all lentils for 1-2hours and grind in to a fine paste.........

grind the oats into fine powder........

now mix the dals,oats powder and chopped chillies and onions and GGP,curry leaves and hing......

heat the pongadala kadai add in add in a drop of oil in every hole...........

fill the oats batter til 3/4th part of the hole..........

cover it with lid and cook it for 5minutes in low flame........

flip the cooked pongadalu and again let it cook for 3 more minutes on other side too........

serve hot with any chutney................

RED CAPSICUM CHUTNEY

I tried this time chutney with red bell pepper....kenyit....here it is.........

Ingredients

red bell pepper-1big
green chillies-4-5
garlic pod-1big
oil-2tsps

Preparation

chop the mentioned ingredients..........

in a kadai heat oil and fry the chopped bell pepper,green chillies,and pods ..........

after cools grind into a fine paste...

tasty red bell pepper chutney is ready.......

serve with rice and idly or dosa.........


NOTE

You can add temper to this...........but i skipped this time.........

this chutney no needs tamarind.........bcz,bell pepper it self sweet and tangy in taste.....

If you want add in little bit like 1/2tsp of tamarind paste........this too tastes good..i tried it........

MELON STRAWBERRY SHAKE



Ingredients

watermelon pieces-2cups
straw berries-5
lemon juice-1tsp
sugar-2tsps
cinnamon powder-1/2tsp

Preparation

Blend all together.......

serve chilled.......

CARROT PAYASAM/CARROT KHEER




Ingredients

carrots chopped-1cup
sugar-1/3cup
milk-3cups
cardamom powder-1/2tsp
cashew-4
raisins-4
ghee-3tsps
Preparation

boil the chopped carrots and blend into fine paste after cools..

heat a pan with ghee and fry the dry fruits and in the remaining ghee fry the paste of carrot
fry just for 3-4minutes to remove the raw smell...

now pour the milk into the carrot paste and let it boil.........

add in sugar and cardamom powder too.......boil it for 5-8minutes...

finally add in dry fruits and serve hot or cold...........

BUTTER BISCUITS


Iam in search of some eggless baking recipes from a long time.........and i just tried on my own these biscuits...came out very well.so,here goes the details of butter biscuits recipe.........

Ingredients

butter-1cup
all purpose flour-1cup
baking powder-1tsp
baking soda-1tsp
vanilla-1tsp
sugar-3/4cup
Preparation

Sift flour in a mixing bowl and add the all other ingredients............

combine well and make into a soft dough..........

pre heat oven to 200c.place a parchment paper in a baking tray......

divide the dough into small round shape balls(i used cookie cutters) and arrange on a baking tray.......

bake this for 40 minutes........or til colour changes on top.......

Serve with milk or as it is to your kids........

PESARA VADALU/MOONG DAL VADA(MY STYLE)

I tried this vadas with left over pesarattu batter................and came out really very nice..

Ingredients

PESARATTU BATTER-2cups
finely chopped onions-2small
finely chopped green chillies-4
pepper-4
cumin-1tsp
cilantro leaves-1/2cup
soda-1/4tsp
crushed curry leaves-2tsps(option)
turmeric-1/4tsp
salt-to taste

OIL-for deep frying

Preparation

In the PESARATTU BATTER add in chopped all ingredients like onions,chillies, pepper,salt, cilantro,cumin,turmeric and soda............

with this vada batter is ready.......

heat oil for deep frying.......

wet your palm and take some batter make it round shape and fry in the oil......

other wise use a spoon.........

fry til brown and crispy........and take on a paper towel...........

serve hot with any chutney.........

THOTAKURA IGURU KURA /AMARANTHUS LEAVES CURRY

Ingredients

thotakura-5bunches
green chilli-6
oil-3tsps
onions finely chopped-2big
salt-to taste
cumin-1tsp

Preparation

wash and chop the leaves and drain the water...........

slit the chillies and heat oil in kadai and add cumin..

after cumin crackles add in onions and chillies and fry til transparent.............

now add in chopped leaves and stir together.......

close with a lid and cook this 4minutes........

again stir this once and cook for 3more minutes an doff the flame........

serve with rotis and chapathi ........

ONION TOMATO CHEESE SANDWICH


Ingredients

bread slices-4(i used whole wheat bread)
onion-1big
tomato-1big
chilli powder-1 1/2tsp
salt-to taste
coriander powder-1/2tsp
cumin-1tsp
cheese slices-2
oil-1tsp


Preparation

Heat oil in a pan add cumin..let it splutter..

Then add in very finely chopped onions and salt......saute til transparent........

Add in chopped tomato,chilli powder,coriander powder too.......mix well.cook this for just 3 minutes.......

Cut the edges of bread slice and apply 1-2tsps of onion tomato curry and put one cheese slice and cover this other bread too........

Grill this in sandwich maker..........other wise just fry on a pan with butter.....
