CABBAGE PEANUT SALAD

Iam going to introduce again a simple,easy salad for those who are in diet.......

Ingredients

shredded cabbage-1cup
shredded carrot-1 1/2cup
crushed peanuts-1/2cup
vinegar-2tsps
salt-to taste
sugar-1/4tsp
cilantro leaves-few
pepper powder-1tsp

Preparation

Mix cabbage,carrot and peanuts in a bowl....

Mix all the other ingredients in a bowl....

Add this to the cabbage mixture......Mix well......

refrigerate for 1/2hr before going to serve......

BEANS KOOTU/BEANS WITH COCONUT IN DAL/FRENCH BEANS RECIPES/

I rarely cook dals...But i like to make KOOTU........YES....The flavour of pepper and coconut in the kootu is just awesome......I have already some KOOTU recipes in my BLOG.....This is another which i tried for our lunch......I used long yard beans this time....It was just hot and spicy..Hope you guys like it....


Ingredients

long yard beans or french beans -2 cups chopped
moong dal-1 cup
black pepper corns -4-5 bis size
turmeric-1 tsp
coconut paste-1/2 cup
coriander seeds-2 tsps
salt-to taste

TO TEMPER
ghee-2  tbsps
cumin-1 tsp
mustard-1/2 tsp
curry leaves-1 sprig


Boil the chopped beans just for 5 minutes or til they soft...(it don`t takes much time)

prepare a fine paste of coconut,coriander seeds,red chilli and cumin..

pressure cook dal for only 2 whistles(don`t over cook) and add in boiled beans and grinded coconut paste and cook this for 5 more minutes....add salt.

make temper and add in dal.....

serve with hot steaming rice along with papad....

BANANA CAKE




I would like to introduce today a yummy cake..it`s a BANANA CAKE.also tried few cup cakes too. banana cake is one of the favourite cake of every one......especially kids love any baked goodies of banana....I used heart shaped baking tin this time..and the cake was baked very well.it came out so soft...just simply frosted with store bought cream cheese,but if you like can decorate with any frsoting....I just loved the shape especially..Is n`t it looking cute???....O.K.....here is goes the recipe........


Ingredients

1 cup (240 ml) mashed ripe bananas (about 2 large bananas)
1 teaspoon baking soda
1/2 cup (120 ml) low-fat plain yogurt
1/4 cup (60 ml) canola, vegetable, or corn oil
3/4 cup sugar
1 large egg or 2 large (60 grams) egg whites
1 tsp vanilla essence
1 cup (130 grams) all-purpose flour
1/2 cup (65 grams) whole wheat flour
1/2 teaspoon ground cinnamon
1 teaspoon baking powder
1/4 teaspoon salt


Preparation

pre heat the oven at 350/180c.line a baking tin with some oil and 2tsps of flour.....

Mix well all dry ings like maida,baking powder,soda and salt......

take sugar in a bowl add butter,beaten eggs,vanilla,milk and beat well.....

mix both dry& wet ings..combine banana puree to this.......(if you like add any chopped nuts)

pour this into the tin and bake for 30-40 mints....oven timings may diff to each oven..

after baked cool on a wire rack and decorate as you like..

serve with a cup of milk or tea...

One more easy and quick making chutney recipe here goes for you all......Hope you like it.try it once and let me know....plz.......

Ingredients

sorrel leaves chopped-3 cups
green chilli-4-6
tomato-1 medium size
onion-1 big
salt-to taste
turmeric powder-1/2 tsp
ginger chopped-2 tsp
garlic cloves-3
cumin-1 tsp
bengal gram/chana dal-1 tsp
oil-1 tbsp

Preparation

Heat pan with oil.add in chana dal,cumin fry little bit..

add in chopped onions,green chilli,ginger and garlic and fry well.....

add in sorrel leaves and tomato chopped,turmeric and cook til soft......

When it cools grind in a jar....serve with hot rice/dosa/idlys...

BEET ROOT COCONUT ROTI


Hi...how are you all?a warm welcome too all...Quite busy for these 4 days and gave a break...so,today iam back with again an easy and tasty recipe....

I like to add grinded veggies paste in rotis making....It is very healthy at the same time tasty too....This time i added beautiful dark coloured beet root paste along with some coconut paste to the flour.....For flavouring i added few other ingredients like cilantro,cumin and some more......For the detailed recipe just check it out below and let me know how it is?

Ingredients

Wheat flour-1cup
all purpose flour flour/maida-1/2cup
coconut paste-4tsps(opt)
salt-to taste
oil-2tsps
green chilli paste-1tsp(can use red chilli powder)
cumin-1tsp
ginger garlic paste/GGP-1tsp
cilantro-hand ful chopped
garam masala-1/2tsp(opt)

OIL-for pan frying



Preparation

Mix flours add in all other ingredients one by one and prepare a smooth dough by adding water..

smear oil on top and cover with a lid for at least 15 minutes.....

Roll into chapathi using extra flour.....

Heat tawa and fry the roti on both sides well..apply some oil in between...

Serve with any chutney or gravy dish....

CHOCO COCONUT FUDGE

I have a big chocolate bar in my fridge form a long time......I thought to try a fudge...So,i added some desiccated coconut powder........Its very easy to make........



Ingredients

chocolate bar-1
coconut powder-1cup
sugar-2 tbsps(optional)
raisins-10-15


Melt the chocolate bar on stove in double boiler method......

Add in desiccated coconut,sugar,raisins chopped and mix well........off the stove..

Fill in the moulds and chilled it for 20-30 minutes.....I used muffins cups to fill......

serve chilled fudges with milk.......

PULIHORA/TAMARIND RICE/ LEFT OVER RICE RECIPES

Usually i prefers pulihora,daddojanam(curd rice)and lemon rice with left over rice..AMMA prepares this pulihora simply superb.usually she makes this on festivals time and for lunch boxes too......whenever we plans to picnics she prepares pulihora and packs into packets for all and serves.......nice idea na....

Ingredients

cooked rice/left over rice-2cups
tamarind paste-1/2cup paste/lemon size ball
red chilli-4
salt-to taste
turmeric-1/2tsp
hing/asafoetida-1 pinch
cumin-1tsp
urad dal/black gram-1tsp
chana dal-1tsp
mustard-1tsp
roasted peanuts-1cup
curry leaves-1spring
green chilli-3
ginger-small piece
peanuts-1/2cup
jaggery-small piece(i didn`t used)
oil-3tsps
Preparation

soak the tamarind in a cup of water and extract the pulp..........

heat oil in a kadai and add in mustard and let them splutter....

add in cumin,red chilli,curry leaves,chana dal,urad dal and fry for half minute..........

now add in slit green chilli,asafoetida,turmeric and ginger and fry for few seconds........

add in tamarind extract and jaggery and cook til oil floats on top...........it should form in thick

consistency.......

remove the flame and add in salt.........

mix this with rice well......and add in roasted peanuts too.........let it be in rest for 2hours.........
serve with papad and curd...........

NOTE

pulihora tastes best after minimum 2-3hours ..especially fresh cooked rice pulihora......
