CHICKEN CASHEW DUM BIRYANI | AUTHENTIC BIRYANI RECIPES OF HYDERABAD


I already have a chicken biryani recipe which i posted in the starting of january.......This is Little bit vary from that.In this cashews plays main role in paste form..Yes..This is the main ingredient which gives the rich taste to the biryani...If you bore Normal biryani try this once....Iam sure you guys will love this....here it goes.......

PREPARATION TIME-30 +30 MINUTES
COOKING TIME-1 HOUR
SERVES-2-3


INGREDIENTS

Basmati rice-2 cups
chicken leg pieces-8-10 medium size
mint leaves-1cup
coriander leaves-1cup
onions sliced-3 med size
food colour-2 pinches mix in 2tsps of warm milk(optional)
oil-4-5 tsps
ghee or butter-1/4 cup

TO MARINATE CHICKEN

Yogurt-1/2 cup
cashew Paste-100 grams
green chilli-3
lemon juice-1/2 wedge
cinnamon stick-1"inch
cloves-5
cardamom pods opened-3-4
ginger garlic paste-2tsps

PREPARATION  TIME

Wash several times and put some slits on top of the chicken leg pieces.....Wash and soak rice for 30 minutes before you going to cook.....

Marinate the chicken with the mentioned ingredients under the list for 1 hour at least...

Fry the sliced onions in 2tsps of oil til dark brown in colour and keep aside

Heat a vessel with remaining oil and Cook chicken in med-low flames til done...

Cook rice up to 70% and drain the water.....Now in thick bottomed vessel heat half  ghee and add cooked chicken first.

 Then add some rice and layer it well...Continue with mint+cilantro leaves and some fried onions.

Now again layer the rice..This time add remained  mint/cilantro leaves and onions....

Finally add in remained ghee and food colour.Close the lid tightly and keep it in dum for 15 minutes.(check image above)
