HOME MADE GARAM MASALA/BIRYANI MASALA/Mahas OWN RECIPES

Finally I prepared some Home made GARAM MASALA. A long time back I planned to make this,finally today I stood infront of you all  with the recipe..Of.course.HOME MADES ARE BEST.With little bit of patience n Interest you can make lots of goodies with simple and available Ingredients which are fresh and pure n the most Important without any chemicals and preservatives.....


Before coming to here I brought store bought GARAM MASALA from India.Again DH brought few packets  last time..But I did n`t feel any fresh flavour..;(  So,I just searched over web and found lots of recipes almost with same Ingredients..I observed that people also buys another masala which love to use in birynis n pulavs-called as biryani masala powder.So,Finally I decided to make some kind of powder which can use for curries/gravies and also for rice recipes.The using quantity of GARAM MASALA will be  different for each other.Here I doubled the Ings. You can see the quantity level..

Here is My version.Next time try this n hope you will..

WHAT YOU NEED

Red chilli-10
black pepper corns- 1 tsp
fennel seeds/sompu-2 tsps
nut meg-1/2(ball)
cinnamon stick-1 full stick
cloves- 1 tsp
cardamoms-5
black cumin/shahijeera- 2tsps
black mustard seeds-1 tsp
coriander seeds-2 tsps
curry leaves-1fist ful
fenugreek seeds-1 tsp


HOW TO MAKE

Set all the Ingredients first n start dry roasting each one in low flame..

(Lazy girl poured all the spices into pan and roasted)Don`t go like that.Be patience..Be careful while roasting.If they burnt garam masala will be bitter in taste n also smells hard..

Dry roast red chillies,curry leaves,cinnamon,cardamom,nutmeg in a pan for 2-3 mins in very low heat.remove n keep aside all these..

Add coriander & cumin & fenugreek seeds,pepper corns,cloves,mustard n fennel seeds and roast for 2 mins.

By shaking the pan from side to side roast until the spices begin to darken in colour.when u feel the nice aroma off flame..

Once all the spices cools using a blender grind into fine powder....

Tip this powder in a dry bottle/plastic box.

If you are a true spice lover add 1/2 tsp of chilli powder to ground masala powder.(I did n`t do this.Instead I added few more red chilli..)

Use in gravies,curries.FRIES n RICE RECIPES.

Use 1/2 tsp for gravies n curries.1 tsp for rice varities n fries.It`s your choice.But I felt this is better.



MAHAS NOTE

Using cardamom n feneel seeds ives nice flavour.Nut meg is an optional.If it is availale can use..
