This is also an old post which taking rest in DRAFT..DH fav fruit is avocado and I mostly prepares juice/milk shake and rotis.For a change I decided to use in baking few days back.Last week I posted EGGLESS PEANUT BUTTER CUP CAKES RECIPE..This recipe also from the same place.I baked these in the evening and took pics in the night time.Excuse me for the clicks which are not proper.
You may surprise If I told about one ING which used in this..YA..Along with avocado this recipe includes BEANS..Original recipe used Black beans,but I used normal red kidney beans.Wash and soak beans over night then in the next day morning pressure cook for 2-3 whistles..Original recipe gave frosting details also.But I went with very less quantity and used it to cover the cupcakes top..I recommends you all to try the frosting also..That gives double kick to the cup cakes..Believe me...Give a try if you like experiments...Sure,the result will be good.Now,to the Recipe..........

WHAT YOU NEED
1 cup all purpose flour
1/2 cup cocoa powder
1 1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup rinsed, cooked black beans(I used red kidney beans)
1/4 cup butter (I used olive oil)
1/2 cup ripe avocado
1/2 cup raw sugar
2 teaspoons vanilla extract
1/2 cup water
HOW TO BAKE
Preheat oven to 350 degrees F. and line a cupcake tine with 12 paper liners.
In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
Use an electric hand mixer to cream together the black beans, vegan butter, avocado, raw sugar, and vanilla extract.
Add the water to the wet ingredients and mix in.
Pour the wet ingredients into the dry ingredients and continue to mix with the electric mixer.
Use a ice cream scooper the distribute the batter throughout the cupcake tin.
Bake for 22 minutes or until a tooth pick can be inserted into the center of a cupcake and pulled out clean.
GO WITH FROSTING IF YOU ARE INTERESTED..I USED SMALL AMOUNT OF FROSTING AND TOPPED WITH SPRINKLES.

PALAK CHICKEN-I tried only 2-3 times in the before years..This time when I decided to cook this also strongly decided to take the pictures..I cooked this palak chicken in the evening and while taking pictures DH watching TV n another side he also waiting for dinner..HAHAHA!! So,sweet...I requested for some time then within 10-15 minutes i completed my clicks..Coming to the recipe,Chicken is very comforting food for non-veg lovers and it`s not high in price to buy also.People who love chicken must try this recipe..I think palak combinations works out best..2 days back I posted PALAK PANEER recipe which was a great hit in my kitchen..And,now this one..
See...making of palak chicken is not much difficult...Choosing the INGS is very Important,like for rich green colour you can add some cilantro leaves and spices like cardamom and cloves are must..Also,you can grind along with palak those spices,other wise you can grind them all separately..Some people like to marinate the chicken.So,you can go in that way also..Wash and marinate chicken with salt,turmeric and lemon juice for 15 mns.I skipped this marinating part.Because I used bone less and in small quantity.So,I cooked directly..Adding yogurt is also very Important step in this.But I used milk..Better to use green chillis instead of red chilli powder to retain the colour..Don`t use more garam masala and don`t skip coriander n cumin powders also.Finally serve with hot rotis..the best combination for ever..
According to my taste I cooked this and feeling happy to share this PALAK CHICKEN Recipe with you all..Hope you may like it..Try this next time and feel free to share your comments..

WHAT YOU NEED
Boneless Chicken chopped into bite size pcs-250-300gms
chilli powder-1/2 tsp(1/2 tsp more in ur spice lover)
ginger garlic paste-1 tsp
coriander powder-1/2 tsp
cumin powder-1/2 tsp
onion-1 med size
tomato-1 med size
garam masala-1/2 tsp
cinnamon stick-1inch stick
fennel seeds -1/2tsp
HOW TO MAKE
Heat 1 tsp oil..Add onion,tomato,spinach,,green chillies,GGP,red chilli and cook til mushy. grind into puree after the mix turns cool..
Heat pan again vth 2 tsps of oil and fry cardamom pods opened,cloves,cinnamon stick,bay leaf,black cumin,fennel seeds then add chicken..Cook for 5 mins..
Now add chilli powder,salt,turmeric,coriander+cumin powders and mix well..
Cook for 10 mins in low flame and add ground palak puree and mix well...
Cook this until chicken done/ turns tender.Now add garam masala,milk(use yogurt) and mix well.cook for 2 more minutes n off flame...
Serve hot with rotis..

On this festival I would like to share a famous,simple and delicious sweet recipe PALAKOVA....Paal kova is a milk sweet which need only 3 ingredients to make...Authentic Paal kova recipe use sugar..But,here I used both jaggery and sugar and the result was really delicious...You can see the pictures for the colour..Paal kova which used sugar looks in light brown in colour. But,this is very dark in colour because of using jaggery..Making paal kova need lots of time and need much more patience to stand near the stove...I`ll give a tip-If you plan to make this prepare every thing in the morning to cook for lunch,then cook one side your daily food,keep the milk bowl other side..While cooking you can stir milk easily in between..I kept the milk bowl on one flame another side I made Murukus..

Milk sweet lovers must try this recipe at least once..Your hard work will result in the form luscious paalkova..Use full cream milk if possible..I used full cream milk.According to the sweet ness levels of jaggery adjust the quantity if you want to try.This pal kova tasted very sweet because,jaggery was very sweet in taste.Other wise go with 1 CUP OF SUGAR and don`t add jaggery..Stirring continuously is very important,otherwise it will burn from bottom.Use very big,non stick bowl and wooden spoon.You can also add saffron if you have..Remember one thing,these kind of milk n sugar based sweets upwards your weight..Eat less n enjoy more..Finally,Try this delightful dessert one fine day when you are in energetic mode and enjoy heavenly...Now,to the Recipe......

WHAT YOU NEED
Full cream milk-1 litre
jaggery/bellam/Guḍ -1/2 cup
cardamom powder-1 tsp(opt)

HOW TO MAKE
Take a big,heavy bottomed bowl and add milk.Keep flame in low.
Start boiling by stirring in between(for every 10 minutes)..Add cardamom powder....Do this process for 45 MINUTES then add jaggery and mix continuously...
keep an eye on the bottom of the bowl..Stir carefully to avoid burning..You can see the changing of colour in the milk..and also milk starts thickening..
After 15 minutes add sugar and mix well...By this time milk will reduce more in quantity and starts forming a like lump..
Add butter and when the mixture turns hard (you can`t stir it more) off flame and serve warm...
Enjoy every spoon happily..

Palak paneer is the bestest gravy in paneer dishes.Don`t know??How I missed posting this delicious recipe in Mahaslovelyhome...Any how,today Iam very happy to share this with you all..Greens are very healthy n to balance the high calories of paneer palak is the best combination..
