CHICKEN KOFTA GRAVY/SPICY CREAMY CHICKEN KOFTA BALLS GRAVY WITH STEP BY STEP PICTURES/HOW TO MAKE CHICKEN KOFTA BALLS

For the first time I tried CHICKEN KOFTA GRAVY in my life..Unbelievable. It was a great success..Even I never tasted before this in my life also..To be frank,DH  don`t likes these kind of spice loaded dishes and deep fryings.When I served this more than enjoying eating,he appreciated me very much,what else a wife need more than that!

But being a food lover  I don`t have any rules and restrictions about food and more than eating I love to experiment first...In my regular shopping,frozen /fresh chicken drum stick packet is a common one.But last two weeks back in MUFFATO while searching for fresh chicken I observed fresh breast packet and thought to cook some fry. Un expectedly  tried these koftas and absolutely it`s a big hit..

ABOUT RECIPE LITTLE BIT:

Making koftas may need some time other wise this is very easy to cook..This dish also goes well in parties..Adding  bell pepper in gravy is an option..But,I like to mix bell pepper with chicken.So,It`s my personal choice and it`s a very good combination too..For rich taste,I added some cream and If possible add it.Other wise replace it with yogurt or full cream milk.Be careful while adding red chili powder.Because, you are  adding green chili in making koftas. After boiling the chicken I chopped finely and  again felt to grind. It`s easy to shape koftas If you grind the chicken.So,don`t skip that step.Now,take a look at the Pictures........:)

PREPARATION TIME-30 MNS
COOKING TIME-20-30 MNS
WHAT YOU NEED
Boneless chicken/chicken breast-500 gms
red chilli powder-1/4 tsp
green chili-3-4
salt-to taste
ginger garlic paste-1/ 2 tsp
cilantro leaves-1 fistful(loose)
mint leaves-1fist ful(loose)
coriander powder-1/2 tsp
cumin powder-1/2 tsp
turmeric powder-1/2 tsp
FOR GRAVY
Onion paste-3/ 4 cup
tomato puree-1 cup
red chilli powder-1/4 tsp
garam masala-1/4 tsp
bell pepper/capsicum-2 small
whipping cream-1/4 cup
coriander leaves-few for garnish
salt-acc to your taste
TO TEMPER
Oil-1-2 tsps
black cumin-1/2 tsp
cinnamon stick-1 inch
cloves-3-4
cardamom pods-3
fennel seeds/sompu-1 tsp

HOW TO MAKE KOFTAS

Wash chicken and boil it with around 2-2 1/2 cups of  water in high flame until the breast turns soft.(I think 10-12 mns)...

Then strain it and let it cool for some time.After few minutes chop it using a sharp knife and grind in mixy jar finely.

Remove this in a mixing bowl.now add all other spices(see in the list) which need to make koftas and grind into paste..

Add this paste to ground chicken and mix well with fingers.with this last step you are ready to make koftas..

Take a lemon size chicken mix into palm and shape it like ball.It should be tight..other wise while deep frying it may split into oil.***So,careful...

Once done shaping balls,heat oil and deep fry them in high-medium heat...carefully fry them and don`t put the flame in complete high.

After frying well remove on a kitchen paper towel and start making gravy...

HOW TO COOK GRAVY

Chop  bell pepper and onion very finely(small pieces)..Heat a pan with oil and add in spices which mentioned above in the list TO TEMPER and fry well..

Add in onion  and cook for a minute in high flame and continue with bell pepper ..

Cook this for 2-4 minutes and add tomato puree..Cook for 2 more minutes and add spices in very less quantities..mix every thing well..

It`s time to add koftas,mix very carefully and cover with lid and cook for 5 minutes in low flame..

Finally add cream and cook for 2 more minutes by closing lid and turn off...

Serve hot with biriyani/pulav or white rice...






MAHAS NOTES
Important step is making koftas.* after boiling should strain well.It means without water..

**I changed the chicken into strainer and pressed it with potato masher to remove excess water.

** when grinding the spices with green leaves don`t add water.water of mint and cilantro leaves may help to blend.It should be thick.

** When you add green paste with chicken the whole mixture is to be thick and hard,but not watery.

** Please be careful in adding red chili powder and salt. Go according to your taste..

** we are using boiled chicken.so no need to fry them for a long time and fry in medium flame of large/big gas burnor.

You can make biryani or pulav with this koftas..(for me, It was evening time and I served in dinner)

Or,you can serve like an appetizer with ketchup and mayonnaise or sauce.
