SOUTH INDIAN STYLE SPICY BASIC MUTTON CURRY/LAMB CURRY/INDIAN NON VEGETARIAN RECIPES/RECEITAS DE CARNEIRO


For the first time I cooked mutton in my life..My mom cooks excellently and specially her Non-veg recipes are simply superb....In my both grand mother`s  family AMMA  is the best cook and every one prefers her cooking  in festival times and functions..Mutton is amma`s favourite after fish pulusu...Don`t know why I avoided these spicy meat foods in college days...
Even I stopped non-veg for 5 years..But,this year DH strictly ordered to re start  and I started eating at the same time own experiments too..More than chicken DH loves Mutton and last month I requested him to brought which  available here only in beef shops.We don`t get lamb meat like chicken in super markets and that was the reason why DH feels lazy to buy every time..I searched in google for recipes and finally with some Idea cooked this..It`s same like chicken curry which we cook with onions n tomatoes..But,the difference is lamb curry takes little bit more time than chicken..Removing the fat content is important step to do before going to start procedure and marinating also reduces cooking time little bit.Lamb meat/curry is famous in hyderabad and this recipe is similar to HYD recipe...Those who loves south Indian spicy foods can try this happily...


CATEGORY-INDIAN NON VEG RECIPES/LAMB RECIPES/GRAVIES
PREPARATION TIME- 15  MINUTES
COOKING TIME-30  MINUTES


WHAT YOU NEED

Mutton with bone-250-300 grams
onions-2 medium size
tomatoes-2 small size
green chillies -4
salt-to taste
red chili powder-1 -2 tsp
turmeric powder-1 tsp
ginger garlic paste/GGP-1 tbsp
garam masala-1 tsp
coriander powder-1 tsp
cumin powder/1 tsp
yogurt-1/4 cup

TO TEMPER

oil-2 tbsp
cardamoms-3
cloves-3
black cumin-1 tsp
cinnamon stick-2 inch


HOW TO COOK

Wash chopped mutton three to four times and marinate with salt,chili powder, turmeric, GGP, coriander powder, and cumin powder for 1/2 hour at least or 1 hour normally..

Heat pressure cooker with oil and add ingredients which wrote under TO TEMPER..

Saute whole spices well in oil and add finely chopped onion n slitted green chilies and fry until turns light brown colour..

Add drained mutton and mix.Keep flame in high this time..After 5 minutes add chopped tomatoes and stir well..

Add some more red chili powder if you are too spice lover..Also can add thick fresh yogurt this time..

Add 1-1 1/2 cups of water and Close with lid and pressure cook for 5-6 whistles or 35-40 minutes in medium flame..

Once done turn off flame..Finally add garam masala and chopped cilantro leaves..Serve hot with white rice or rotis..


MAHAS NOTES

You can pressure cook mutton separately and cook with onion and tomato in pan...

Can add yogurt while marinating mutton..

You can skip tomatoes if you don`t like...

Add water carefully..If you add more than 2 cups curry turns too thin like gravy..So,adjust water,depending on mutton quantity.

Depending on your pressure cooker model check the time. which I used here is not whistle type and I follows clock to turn off always. ;)
