Iam not fond of GHEE even from my childhood.. ....I only eats ghee with sweet jaggery rice and polis which AMMA makes for Festivals That too particularly on UGADI.Even AMMA don`t makes ghee in home instead she buys a 200 ml of packet on festival times...

MANGO RICE/ARROZ DE MANGA FRUITA/SWEET VERSION/EASY RICE RECIPES


This is little bit different from other RICE Recipes....Actually I have planned to make some Tangy Rice with green Mangoes.....But later the result was this.The Mangoes are sweet in taste so,Changed the mind and tried this..It`s very simple and who don`t likes mangoes can try this way.....

Mango grated-2cups
cooked white rice-1-1.2cups
fennel seeds/sompu-1tsp
green chilli-3-4
butter-1tsp
urad dal-1tsp

HOW TO COOK

Add salt to the rice and keep aside.

Heat woke with butter and saute fennel seeds/dals and chilles....

Add mango grated and fry for 5 minutes in low flame and mix rice.Give a good mix and serve hot immediately..

BEET ROOT HALWA/DULCE DE REMOLACHA CON LECHE CONDENSADA/USING CONDENSED MILK/Mahas OWN RECIPES


BEET ROOT.. one of the attractive root vegetable with dark red colour.... I  often make beetroot curry to serve  with rotis.Few beetroots are lied down poorly in fridge and Iam not in mood to cook any curry.And I have condensed milk too.So, tried this delicious kheer on  my own...It` very easy to make and tastes heavenly.Try this and enjoy!!

WHAT YOU NEED

beet root puree-3/4 cup
descicated coconut powder-1/4 cup
milk-3cups
condensed milk-1cup
cardamom powder-1/2tsp
cashews-4
raisins-8
badams/almonds-5




COOK LIKE THIS

Heat ghee and fry dry fruits and remove......

In the same pan add beet puree and mix for 2-3  minutes....Then add 1 cup milk and cook in low flame for 5 minutes..

Add coconut powder and mix...

 Now add condensed milk and remaining milk and cook for 5-8  more minutes.should be done in low flame.....

This time  you may be observe that the mixture starts leaving the pan from sides..If so,then halwa is ready..

This time add in crushed cardamom powder and dry fruits.mix once and off the flame..

Serve warm or chill....

TASTES BEST AFTER THE REFRIGERATING.....




MAHAS NOTES

The measurement of the milk was given approx.So,please make sure while adding.......

If halwa is too dry then add 1 more cup of milk...

If you are sweet tooth add 1/2cup more Condensed milk....

Coconut is optional.can skip it.and use 1cup beet root.......

Finally serve chill...

An apple keeps doctor away.......I eat apples Instead of taking in the form of liquid.....But DH is lazy to go with apple.So,I do some times milk shakes or smoothies for him.I tried this yesterday and tasted really good..And the Important note  is it`s without milk..S,It`s perfect for my DH.Will try after he returns to home...;-(

STRAW BERRY SAUCE/STRAWBERRY PUREE/ EASY TO MAKE-TASTES GREAT


This is the one more Recipe Which I tried of JOY OF BAKING.......This is very simple and easy to make..Actually It is not at all a Recipe.....But useful one......So,If you r the lovers of STRAWBERRIES then go head for this......truly delicious.......

INGREDIENTS

STRAW BERRIES-500 GRMS
SUGAR-1/4CUP



HOW TO MAKE

If you are using fresh straw berries just blend in the juice mixer til turns pureed.....

Take 1/2 cup in a bowl and to the remaining add sugar and give a good mix.....

Now mix this to the other sauce....mix well.....

Refrigerate and use when u need..

Can Refrigerate for 1 week& can froze for a long time too...

Use like instant jam....

EGG BADAM GRAVY/EGGS IN ALMOND PASTE GRAVY



EGGS Which are always available in every home(not in vegs home.hehehe)I always buys a box of eggs whenever  visits the super market....MAHADEV is just craze about the eggs. Already i said this in so many previous posts.I boils the eggs only for him specially.

Last week i tried this gravy on my own idea....Ingredients which i used in this are personally my choice....And it tasted good too.So,I thought  to share the recipe with you all.....O.K.the recipe here goes......

PREPARATION TIME-20 minutes
COOKING TIME-20 minutes
SERVES-3

Ingredients
eggs boiled-3-4
onions-2 med size
tomatoes-2med size
ginger garlic paste-1ts
chilli powder-1tsp
salt-to taste
coriander powder-1ts
garam masala-1tsp
dried kasoori methi-1tsp
oil-2tsps
cumin-1/2tsp
fresh cream-1/4cup+2tsps

TO GRIND

Almonds-10
milk-1cup
cloves-3
cardamoms-2
cinnamon-small piece
fennel seeds/sompu-1tsp
tamarind paste-1tsp




METHOD

Remove the shell of eggs and keep aside.Chop onions,tomatoes and grind them separately.....

Grind the ings which mentioned under the list-TO GRIND. and keep aside this......

Heat a vessel and with oil...saute cumin and add onion and tomato pureed one by one..Cook these til raw smell oozes out..

Add in ginger garlic paste and salt,chilli  powder and mix well.Cook for 3 minutes with a lid on top in med flame.

Now add ground almond paste and mix well together......Cook this for 5-8 minutes..

Now add garam masala,coriander powder and kasoori methi mix mix.

Add in eggs and cream....mix once..After 5 minutes off flame.add in chopped cilantro or remaining 2tsps of cream...

Serve hot with rice or rotis....



MY NOTES

Add cashews instead of almonds.......

Adding cream gives the rich taste....

I used skimmed milk.But it`s better to use full cream milk....

LIMA BEANS GRAVY/SIDE DISHES FOR ROTIS N CHAPATHIS



This is the Second Recipe I tried with LIMA BEANS. I never bought  lima beans until i saw in  the super market  MUFFATO ....I really like to try new recipes specially with grains or seeds like PEAS,CHICK PEAS,KIDNEY BEANS,COW PEAS etc....  ......I tried RICE PULAV with half of the beans and remaining  beans I used in this GRAVY..

My Hubby loves to eat dates and we have a best quality grocery store called POMARE FOZ..Whenever we visits he buys dates packet..Normally i use dates in salads and smoothie recipes.From a long time a dates packet was lying down in my fridge..

OREO TRUFFLES/NO BAKING/KIDS RECIPES

 

Few months back I tried Nutella truffles and I failed in shaping.The Recipe was in my mind for a long time and I applied for this OREOS..Long back I tried only Oreo shake once and next fudges which I posted last and this was third recipe with Oreos.this will be the perfect for parties too.I bet definitely kids will enjoy.   



CATEGORY- NO BAKING/OREO RECIPES/TRUFFLES RECIPES

PREPARATION TIME-15 MINUTES
REFRIGERATING -1 HOUR
YIELDS-8-10 (DEPENDS ON SIZE OR SHAPE)

INGREDIENTS

OREO COOKIES/POWDER-1CUP
COCONUT POWDER-1/2CUP
BUTTER-1-2 TSPS
MILK-AS NEEDED
CHOCOLATE MELTED-1CUP
COLOUR SPRINKLES-FEW




STEP BY STEP PICS


PREPARATION

Break the cookies and crush them.Or use mixer to grind them into fine powder...

Add in coconut powder and butter  mix well....

Now add Milk as needed (may be 2-3 tsps) with spoon to make it like a dough ball....

Shape it like round dough and divide in same size and shape into balls.....

Melt chocolate and EAT 1 SPOON FIRST THEN dip these oreo balls into the and tip into the plate or silver foil....

Refrigerate them for at least fro 1hr and before going to give kids top with some sprinkles.....

Enjoy the easy breezy truffles........


MY NOTES

Actually it`s my own idea of making truffles...After 2-3 days I checked few recipes and they added only cream cheese ..So,You may try it.....

While adding milk be careful....

Freezing is important.Otherwise you won`t get the perfect shape..

Add any dry fruits of your choice for crunchy taste as coconut in my personal choice.....

OREO FUDGE/OREO COOKIES CHOCOLATE FUDGE


I have a oreo packet from one month in my fridge,have been thinking for recipes.Few days back while checking out google got some recipes.So,using oreos tried Truffles which was in my to do list from a long time used remained to make this fudge bars.


CATEGORY-KIDS RECIPES/EASY NO BAKING/OREO RECIPES
PREPARATION TIME- 30 MINUTES
RESULT-12 FUDGES APPROX

INGREDIENTS
Oreo cookies powdered- 1 cup
chocolate melted-3/4 cup
butter-2 table spoons

take the melted chocolate in a bowl.....to this add butter.....Add in powdered oreo cookies mixture...Mix well together....On aluminium foil place this and give a good shape..Refrigerate this for 1 hour...When the fudge is hard take it out and cut into square size pieces..Garnish with sprinkles if you like and serve to your kids.....
MY NOTES
If you like add 1/2cup desiccated coconut  and make fudges.....
Replace chocolate with white chocolate for a change.......
