HYDERABADI FAMOUS OSMANIA BISCUIT/HYDERABADI RECIPES/EGG FREE SALT BISCUITS/HYDERABAD`S IRANI CAFES FAMOUS OSMANIA SALT BISCUIT/STEP BY STEP PICTURES/HYDERABAD POPULAR CUISINE


The capital of Andhra pradesh is HYDERABAD which is fifth largest city in India.It is attached with secunderabad and both called as twin cities.Hyderabad cuisine is a meat and rice oriented cuisine which inspired by mughlai cuisine.There are so many famous dishes are there which brought a popular name for hyderabad. Like, HALEEM,BAGARA BAINGAN,MIRCHI KA SALAN,KHUBANI KA MEETHA,DOUBLE KA MEETHA,SHEER KURMA,MUTTON DISHES etc..Also it is famous for hot Irani chai(Tea) and osmania biscuits(salt biscuits)..These are soft tea biscuits which got a name after last ruler of hyderabad Mir,osman Ali Khan-the seventh nizam..In all kinds of Irani cafes you can find these biscuits and they serves with tea which is callled as irani chai.In scores of hotels across the city,this is favorite tea time snack and you can find in bakeries too.this biscuits are delicious,crispy and melts in mouth,strangely,it is popular with kids and adults and in many homes guests are treated to this biscuits.

Coming to the recipe,these are in my to-do list from a long time and I followed a very old telugu new paper for measurements..Original recipe gave quantities in grams and I changed into cups also did slight changes in the recipe.Because of adding butter it`s important to freeze dough and each n every ingredient is necessary for the recipe.Be careful while adding salt and no need to add soda,I feel.If you want add just 1/4 tsp.Before using cookie cutters roll dough well and cut into pieces.Other wise you may get improper size cookies.{you can see the fist pic.few r thin looking n few are fat ;)} Over all it`s not a big difficult to make and MAHAS target is to Introduce innovative,healthy recipes.

PREPARATION TIME- 60 MINUTES
BAKING TIME-40  MINUTES


WHAT YOU NEED

Butter(no salt) melted -1 cup
all purpose flour/maida- 3+ 1/4 cups
powdered white sugar-3/4 cup
baking powder-1 tsp
vanilla custard powder-1/4 cup
non-fat milk powder-1/2 cup
milk-3/4 cup
salt-1 tbsp




HOW TO COOK

Take a big bowl and add all dry ingredients one by one and mix with spoon well.

To this pour butter and beat with (hand)cake mixer..It forms like dough..

Take it out on a smooth surface and knead like soft roti(chapathi) dough.

Place this in freezer bag and freeze for 40 minutes at least.

After 40 minutes take out dough and keep in normal temperature.In mean while place a parchment paper in baking tray and brush it with oil.

Check the dough  status.If it is normal knead it once again roll it like log.using roti roller roll it like roti and cut in desired shapes.You can use cookie cutters of your choice.

Place all the cookies in tray and bake for 30-35 minutes at 180 degree C.In between(after 15 minutes) flip biscuits using gloves.

Once done turn off and cool on wire rack..Serve warm with Hot Tea..




MAHAS NOTES

The measurements are perfectly given and they are my own..

Salt quantity looks more,but with remaining other sweet(content) ingredients it balances well.

The name of the biscuits is Included "salt".So,you should be careful while adding it.If you add less tastes like, diet biscuits..result depended on salt quantity.

Here we don`t add soda.so,they don`t raise in size.

Because of using butter it`s very Important to freeze dough.

Add only powdered sugar,not crystal form.

to be honest I forgotten adding baking powder n still got good looking cookies.May be it was the reason for over baking.I mean 35-40  minutes.

SO,don`t forget to add baking powder and you can complete baking in 30 minutes exactly if you add baking powder I think.
