MUTTON PULAV/LAMB PILAF/EASY MUTTON PILAF WITH DRY FRIUTS AND NUTS/ARROZ CARNEIRO/LEBANESE RESTAURANT STYLE MUTTON RICE WITH INDIAN TOUCH/SOUTH INDIAN NON VEGETARIAN RICE RECIPES/ WITH STEP BY STEP PICTURES/HAPPY NEW YEAR 2014/

Chicken biriyani was the first post  in 2013 and  2014 is starting with mutton pulav..Yup...what a coincidence!!!! By the way where was gone end of world- 2013..Rubbish!!what I came to know is,this world never ends.we people should move from generations to generations by accepting changes in society along with learning how to live.
What are the new decisions of new year..Hehehhee!! last year also I took some decisions but except learning portuguese did n`t finished any one.Of.course.still Iam learning to try speak fluently..2013 teached me two lessons one is "DIET".. I deleted the word diet from my personal diary.Honestly,I can`t .second is,never going to connect people deeply. Still,now did n`t took any serious decisions in this new year,but thinking few like, this year I won`t buy any kitchen stuffs for blog,only healthy baking,uploading recipes with  step by step pictures,education of my two kids,some beauty care,;) good photography,reducing weight(but not diet).Oh.my god..can I do all these???..let`s see..The most Important news is we confirmed our trip and going to fly this month.I scheduled few posts which may entertain you all and once after returning to home I will be active in blog with interesting recipes specially with step by step pictures.I promise.Oops!!!so much of dedication on blog baby!!!


Coming to the recipe,we don`t visits restaurants often where my kids breaks plates and glasses,;) But last few days back,DH came to know about a lebanese restaurant and my curious forced to visit.It`s very small in  place with enough foods specially without cow meat.I fell in love with arroz de carneiro (rice cooked with sheep meat)..They did n`t used any spice powders or whole spice ingredients and cooked with lots of butter and pistachios.I completed lunch only with rice and finally with biscuit chocolate pudding..It was just fantastic and worth price too.While moving from the restaurant strongly decided to try out that rice and within 15 days I tried this with some slight changes in indian style.Non veg lovers must try this one, without forgetting of adding lots of nuts..So,book mark recipe and go.:)


CATEGORY-NON VEGETARIAN/MUTTON 
PREPARATION TIME- 20 MINUTES
COOKING TIME- 30-40 MINUTES



WHAT YOU NEED

Mutton boned ,chopped-300 grams
basmati rice-2 cups
onion-2 sliced big
cashews+almonds+pistachios+raisins-1/4+1/2+1/4+1/4 cups
tomatoes-2 medium size chopped
green chilis-5-6 slitted
milk-2 tbsp
yogurt-2 tbsp
garam masala-1 tsp
coriander powder-1 tsp
cumin powder- 1tsp
ginger garlic paste/GGP-1 tbsp
turmeric powder-1 tsp
red chili powder-1 tsp
salt-to taste
lemon juice-1/2 wedge
cilantro leaves chopped -2-3 tbsp(opt)
mint chopped -2-3 tbsp(opt)
** GHEE-2 TBSP

TO TEMPER

OIL-2 tbsp
butter-2 tbsp
cloves-3-4
cardamoms crushed-3-4
cinnamon stick-1 big
pepper corns-1 tsp
black cumin-1 tsp
fennel seeds-1 tsp



HOW TO COOK

Wash well chopped mutton and marinate with GGP,salt,red chili powder,yogurt and lemon juice for over night or at least 1 hour..

Pressure cook this mutton with enough water,for 30 minutes in high flame or up to 4-5 whistles.Mean while wash rice and soak in water for 30 minutes.

Heat a pan with ghee or butter and fry all chopped dry fruits and nuts well.

Now Drain mutton from water and keep aside..Turn on heat again in the same non stick pan with oil+butter and when it`s hot add in all spices which given under list "TO TEMPER"..

Fry well and add sliced onions+green chilies with salt and saute until turns brown in colour..then throw in tomatoes and cook until it turns mushy..

Now Add mutton and dry fruits and mix well..After 3-4 minutes add turmeric,coriander+cumin powders,garam masala and mix...

Again after 3 minutes add in chopped mint+cilantro leaves and milk and soaked rice with enough water..

Cook until rice done and serve hot with raita..

MAHAS NOTES

Frying in ghee is an option.But gives a very rich taste...If you don`t like can cook in pan after onions..

You can skip milk..It`s my choice.Almonds and pistachios are the Important nuts for this PILAF.

If possible use boneless meat which saves times..

You can replace mutton with chicken and can call "chicken nut pilaf'" ;)

Acc to your taste add red chili powder and salt..

Marinating and pressure cooking is Important..

For biriyanis and pulavs always use only basmati rice..
