RIDGE GOURD ROASTED CHANA DAL CHUTNEY/BEERA KAYA PUTNALU CHUTNEY/RIDGE GOURD RECIPES/SOUTH INDIAN CHUTNEY RECIPES FOR RICE N ROTIS


Ridge gourd is one of the healthy vegetable with no calories..This chutney may sounds weird but really this combination works out well..To use roasted chana dal I experimented this chutney and it tasted good with hot white rice..To be honest,long time back I also tried one more combination which tasted nasty..Hehehe..N the combination was cabbage and roasted chana dal..Don`t know the exact mistake about this trial,but it tasted weird..Some times it happens.:)
Any way try this ridge gourd and roasted chana dal combination and let me know about the result...If any one of you tried with any other vegetable please leave in comments.Sure I will try it...:)

WHAT YOU NEED

Ridge gourds-2 med size
putnalu/roasted chana dal-1cup
salt- to taste
green chilli-3-5
tamarind paste-1/2 tbsp

TO TEMPER
oil-1+1/2 tbsp
mustard seeds-1tsp
cumin-1tsp
urad dal-1-2 tsp
chana dal- 1tsp
hing- 1/4 tsp
curry leaves-1 sprig
dry red chilli-2


HOW TO COOK

peel the skin of ridge gourd if you like other wise wash well and cut into medium size pieces...

Heat a kadai with 1/2 tbsp of oil and fry pieces by adding enough salt til soft.Next add chopped green chili too.cook for 2 more minutes.keep aside these..

Now dry roast the roasted chana dal(putnalu) for 2-3 minutes in medium flame then grind along with cooked ridge gourd.

take this in a bowl and put temper in another bowl with given INGS in 1tbsp oil and mix it in the ground chutney..

Serve with rice or rotis.

These are the  lemon cup cakes with cardamom flavor..Also, it`s an egg less version and you can replace normal milk with almond or soya milk to make it complete vegan...On my own Idea I added some fresh cardamom powder and after baking cup cakes was smelled with both aromatic flavors..But,It`s an optional and you can omit it if you don`t like cardamom smell..It`s your choice.Try these lemon cup cakes next time and enjoy...

EASY STUFFED RAJMA PARATHA/KIDNEY BEANS PARATHA/EASY SOUTH INDIAN DINNER RECIPES/INDIAN PARATHA RECIPES/FEIJÃO PÃO ÍNDIO

 

WHAT YOU NEED

rajma(kidney beans) pressure cooked-1 cup
green chili minced-3-5
chat masala powder-1/2 tsp
chili powder-1/2 tsp
garam masala-1/2 tsp
salt-to taste
GGP/ginger garlic paste-1 tsp
turmeric powder-1/2 tsp
cumin-1 tsp


HOW TO COOK

Take wheat flour salt,oil in a bowl and with enough water make it like soft dough.After 20 minutes divide into same size balls.

Mash rajma and mix remaining INGS and combine well......Shape into round balls.

Take a dough ball and roll it with roti roller in medium size and place rajma ball.

Cover from all sides and roll it using extra maida flour. Stuff rajma balls all like this  in the rolled dough...

Heat tawa and pan fry the parathas in both sides.Serve hot with yogurt.

CABBAGE FRANKIE/CABBAGE EGG ROTI ROLLS USING LEFT OVER CABBAGE CURRY/LEFT OVER CURRY RECIPES/STUFFED INDIAN FLAT BREADS


 I prepared this using left over cabbage curry,instead of eating it same like always with rotis or rice..The only innovative step is I added boiled n chopped egg cubes in this..It`s very easy to make and you can try with any other curries or paneer dishes too...


CATEGORY-LEFT OVER RECIPES/STUFFED ROTIS
PREPARATION TIME-10 MINUTES
COOKING TIME-30 MINUTES


WHAT YOU NEED

Cabbage curry-1 cup
boiled eggs-2
garam masala-1/2 tsp

TO MAKE DOUGH

wheat flour-1 cup
salt-1/4 tsp
oil-1 tbsp
water-as needed to make dough

OIL-for pan frying


Heat pan with oil and add in left over cabbage curry..Saute for 3-5 minutes in low flame.

Add chopped boiled egg pieces and mix well..

Prepare roti dough by adding all ingredients..Roll it and pan fry on both sides using oil little bit.

After cooking well, place the cooked curry and roll it..

If you like cut into pieces and serve hot.

EASY SPICY RICH CASHEW CHICKEN CURRY/SOUTH INDIAN NON VEGETARIAN CHICKEN CURRY RECIPE/INDIAN CHICKEN RECIPES FOR ROTIS/FRANGO COM CAJU CARIL



Kaju  chicken is one of the easy and tasty curry which well goes with rice and even with rotis and parathas..This dish also perfectly matches in party menu because of its rich taste.the two important points are,you should use fresh cashews and chopped boneless chicken..yes..boneless cubed meat goes well in this curry or even you can use boned too.I used thigh pieces and it took extra time to cook..Other ingredients are very common which we use for every non-veg dish except soaking cashews in milk..Adding cream and full cream milk gives a delicious taste to the curry.Try this next time in your kitchen and feed your family delcious food.


CATEGORY-CHICKEN/NON-VEG
PREPARATION TIME- 20 MINUTES
COOKING TIME- 20-25 MINUTES



WHAT YOU NEED

Chicken thigh/leg  pieces(drum sticks)- 15/1 kg
cashews-16
milk-1/3 cup
onion-2 medium size
tomatoes-2 medium size
red chili powder-2-3 tsp
salt-to taste
turmeric power-1/2 tsp
garam masala-1/2 tsp
green chili-3-4 slitted
yogurt/curd-2 tbsp

TO TEMPER

Oil-2 tbsp
cardamom pods crushed-3
cloves-4
cinnamon stick- 1 inch stick
fennel seeds-1 tsp
black cumin-1 tsp



HOW TO COOK


Wash twice and thrice chicken and pressure cook for 10 minutes with little bit of  salt and 2 pinches of turmeric.

Chop onion and grind into puree..Soak cashews in milk for 15-20 minutes.Chop tomatoes and blend with cashews+milk green chili,salt,chili powder,turmeric.make it like fine puree.

Heat oil in pan and saute whole spices..Fry onion paste for few minutes or until raw smell oozes out and add tomato puree..

Cook for 3-5 minutes in medium flame and add yogurt..Mix well this after a minute add  pressure cooked chicken and mix well..

If it looks too thick add 1/4 cup of water and cook for 10 minutes in low flame.

Your chicken is done.add garam masala finally and some cilantro leaves chopped.


MAHAS NOTES

Because of using thigh pieces I pressure cooked it first.If you use boneless chicken no need to do this step.

Boneless chicken works out well for this recipe.

You can grind the whole spices along with tomato mixture.

Milk and yogurt both are Important for the recipe.soaking cashews milk gives a rich taste to the dish.

RICOTTA CHEESE POTATO KOFTA GRAVY/PANEER ALOO KOFTA GRAVY/HOW TO MAKE DEEP FRIED PANEER POTATO KOFTAS/STEP BY STEP PICTURES/EASY SOUTH INDIAN VEGETARIAN GRAVIES FOR RICE


A very rich and delicious tasty gravy for vegetarians and paneer lovers..
CATEGORY-PANEER/KOFTA
PREPARATION TIME-20 MNS
COOKING TIME-30 MNS


WHAT YOU NEED

TO MAKE KOFTAS

Ricotta cheese/paneer - 125 grams grated
potatoes- 2 medium size
red chilli powder- to taste or 2 tsp
salt-to taste
ginger garlic paste-1 tsp
cumin powder-1/2 tsp
coriander powder-1/2 tsp
garam masala-1 tsp
turmeric powder-1/2 tsp

TO MAKE GRAVY

Onion paste-1/2 cup
tomato puree-1 cup
kasoori methi-1/2 tbsp
yogurt-2 tbsp

TO TEMPER

oil-1 tbsp
cardamoms crushed-2
cloves-3
fennel seeds/sompu-1/2 tsp
black cumin-1/2 tsp


HOW TO COOK

Take grated paneer in a bowl and add  mashed potato.To this add little bit red chili powder+salt+coriander powder and knead like dough.And divide into same size balls..heat oil in pan and deep fry the balls until light brown in colour.Keep aside these all..



Heat oil in non stick and saute ingredients which given under TO TEMPER. Add onion paste and saute for 2-3 minutes and then tomato puree..Add in balanced spice powders+dry kasoori methi and mix..Cook 2 minutes and add 1/4 cup of water and cook for 5-7 minutes in medium flame.

Now and deep fried balls and yogurt.carefully mix and cook for 2-3 minutes..turn off and add cilantro leaves.

Serve hot with white rice or rotis.

WHEAT FLOUR EGG FREE,BUTTER FREE AVOCADO CHOCOLATE CAKE/WHEAT FLOUR OLIVE OIL AVOCADO CAKE/HEALTHY BREAK FAST CAKE LOAF/LOW CALORIES CAKES




Avocado in baking may sounds different but it really works out well.I already posted avocado cup cakes which are perfect for health conscious persons..And this is the first cake loaf of avocado in Mahalovelyhome..Baking with avocado type of fruits is like a challenge and wheat flour bakes are little bit tough too.In wheat flour cakes if measurements are eaxcat you may get a good texture..Here in this you can replace wheat flour  with APF or white flour and texture will be much better than wheat flour version cake...Also Its important to use fresh avocado and good brand cocoa..Baking is easy if you are with perfect  quantities+ best brand ingredients ,otherwise the whole process will be flop and simply you start feeling sad about wasting time and you valuable food stuffs.Why iam saying this is ,Avocado which I used here was not too good and the day when I baked the cake, it tasted good but next day changed taste.So,be careful while adding any fruits in baking..Don`t neglect too add fresh fruits and right meauserings.

WHAT YOU NEED

wheat flour- 2 cups
sugar-3/4 cup
avocado pulp-1 medium size fruit
cocoa powder-3/4 cup
baking powder- 2 tsp
salt-1/2 tsp
milk-1 cup
oil-1/4 cup
vanilla essence-21 tsp
cinnamon powder- 1 tsp(optional)
dried apricots chopped- handful



HOW TO BAKE

Take mashed avocado pulp in a bowl and add milk,oil,sugar n vanilla essence...Sift flour,baking powder,soda,cocoa,salt, in a separate bowl..

Mix wet ingredients and add in dry ingredients one by one..Now throw chopped apricots...

mix well with spatula and pour this into prepared tin or glass bowl..

Pre heat oven at 200 degree C.Place tin  in oven and bake until done.

It`s very healthy and easy to make..
