SPAGHETTI PASTA WITH HOME MADE EASY CILANTRO SAUCE IN INDIAN STYLE /ITALIAN SPAGHETTI RECIPES/VEG SPAGHETTI PASTA RECIPES/EASY PASTA RECIPES



Iam not a big pasta lover,but I like only spaghetti variety which I tasted in TRIGO restaurant. It is one of the popular place in foz do iguacu city And my home is very near to this delicious place.Ya..I can see the restaurant from my balcony...It is famous for pasta foods,cakes,breads and Pão de queijo.My two kids are heart dying lovers of Pão de queijo and once in a week they pushes DH to buy few.
Attracting part of this restaurant is they cook pasta with our desired ingredients which located one side in front of us.They also have 3 more variety of pastas but I only prefers this spaghetti.They also uses different kinds of sauces instead of simple tomato based.I cooked this recipe by inspiring the restaurant versions and cilantro sauce is my own Idea.This sauce may looks like our Indian cilantro chutney,but it tastes well when you fold with pasta along with some nuts..The whole recipe may need 20-25 minutes and it`s a worth try recipe.It goes well in dinner times and to use up the bulk quantities of cilantro leaves this is one of the best recipe.You can refrigerate this sauce fro about 3-5 days,If you cooked well..

PREPARATION TIME- 15 MINUTES
COOKING TIME- 20-25 MINUTES


FOR CILANTRO SAUCE

WHAT YOU NEED

Cilantro leaves chopped -2 cups loosely packed

tomatoes-3 small or 2 big
onion-2 small
green chili-4
water-1/4 cup
salt-to taste
oil-2 tbsp
coconut milk-2 tbsp/30 ml
ginger garlic paste/GGP-1 tsp


HOW TO COOK

Heat pan with oil and saute cumin and add onions and saute..


Then add chopped tomatoes and mix.Add chopped chili,salt,GGP and cook for 3 minutes in medium flame.


Add cilantro leaves and mix.Cook for 5 minutes in medium flame and once it looks mushy turn off..


When it cool grind mixture into fine paste using blender. and keep aside or refrigerate for further use.




HOW TO MAKE PASTA

Boil water with salt and 1 tbsp olive or veg oil in a bowl and place pasta in it..Let it sit for 5 minutes.Then slowly push the pasta with spoon.(this step is depended on your bowl variety.If you use round shaped bowl,then slowly swirl/twist pasta to cook completely.It gives good shape instead of breaking pasta )


When pasta cooked completely drain in colander and keep aside.
Now heat big wide non stick pan add 2 tbsp butter and saute fistful black raisins/kismis,15 chopped cashews nuts and fry well.

Now add in fresh home made cilantro sauce and cook for 2-3 minutes.


then add cooked pasta and stir carefully and cook for 5 more minutes in medium flame and turn off.(we are using cooked sauce and pasta,so,it no needs much time to cook)


Serve hot always.
