Easy beet root curry/beet root curry for rotis/Healthy south indian vegetarian curries/Step by step pictures/beet root stir fry for chapathi/beet root health benefits


 Beet root is a very healthy n attractive color vegetable which is very cheap in price too...I often makes juices with  this lovely color root vegetable and if they are too pulpy uses to make some curry like this. If you have fresh hard beet roots then grate them to make this curry,but it needs some time and patience too.
Also You can add coconut powder in the final process,for a rich taste. But, I skipped here.Adding urad dal and chana dal also gives a good crunchy taste to this simple curry..So, don`t skip dals and more than the rice This curry well goes with rotis. Cook often this kind of recipes in kitchen for good health.

Ingredients
 beetroot-3 small
dry red chili-3-4
onion-1 small
garam masala powder-1/2 tsp
coconut powder-1 tsp
coriander powder-1/2 tsp
cumin powder-1/2 tsp
curry leaves-1 sprig
oil-2 tbsp
salt-to taste
turmeric powder-1 tsp (opt)
cloves-2
onion-1 small
ginger garlic paste (GGP)-1 tsp
cumin seeds-1 tsp
mustard seeds-1 tsp
chana dal-1 tsp
urad dal-1 tsp


Preparation

1.wash well beet roots and chop into very small size pieces.

2.heat a heavy bottomed pan add oil cumin,mustard,chana dal,urad dal,curry leaves,red chili,cloves and fry well.

3.add chopped onion and ginger garlic paste saute well. Once onion turns brown add beet root pieces and  combine every thing.. Keep lid on pan for 1 minute. Then add salt and mix together.cover with lid again and let it cook for 4-5 minutes in low flame.

4.Now you can see the well cooked beet root pieces which are turned into soft..Now add all powders and stir one more time.Keep lid and pour little bit of water on top of it to avoid  burning..

5.You can add 1-2 tbsp of water in the curry too and stir it well.Let it cook this on medium flame for 5-8 minutes and turn off.

6.after cooked completely add  coconut powder and cilantro leaves and mix and serve hot with rotis.
