Some combinations sounds really weird,but after tasting it we may know the actual truth of the recipe/ taste.Is there any one who don't likes okra..oh my god? Iam hearing few blah blahs now.But,more than the 6 out of 10 likes this super slim okra.
Come on..Iam just saying with general knowledge,but not after referring any books or sites;) Ok.Leave about others..I don't want to blame any one if this veg is in their un favorites list,My self,i like okra to eat very much either in curry form or like raita..Fresh and soft fried okra pieces tastes really soo good and this kind of healthy simple curries perfectly matches with rotis for dinner time..Mixing vegetables like this not only gives a good taste,also may get more proteins and vitamins.This is very easy to make,but the spice powders and pre roasting okra gives a nice flavor and increase the  relish..If you are bore with regular okra fry combine capsicum like this next time and serve with hot rotis.

WHAT YOU NEED

Okra/bhendi-15 big
tomatoes-1 big
onion-1 big
capsicum finely chopped-1 cup
green chili-1
chili powder-to taste
salt-to taste
turmeric powder-1/2 tsp
kasoori methi/dry methi leaves-1 tsp
coriander+cumin powders- 1+1 tsp
garam masala-1/2 tsp
Oil-2 tbsp+1 tbsp
mustard seeds-1 tsp
cumin/jeera-1 tsp
red chili-1
urad dal-1 tsp
hing/inguva powder-2-3 pinches
Ginger garlic paste(GGP)-1 tsp
cilantro leaves few -for garnish


HOW TO MAKE



Wash okra well and wipe out with fresh dry kitchen cloth and keep aside until completely dry. Then cut into equal size pieces.also chop onions,tomato,and capsicum.
 Heat a pan with 1 tbsp oil and add okra..Saute til shrinks and soft..This kind of sauteing avoids the stickiness and gives good taste to curry.
now turn on heat and place pan. add 2 tbsp oil in that n then cumin,mustard seeds,red chili,hing powder and saute for few seconds....
add in GGP,onions and saute well.. then add chopped capsicum and salt..Mix well and let it cook fro 2-3 minutes in low flame. Then add tomatoes n mix well.add  salt,chili powder,turmeric powder,garam masala and combine well.
cook for 3-4 minutes in medium flame by closing with lid and add okra. Combine every thing once and add  1-2 tbsp of water.Fold with curry and cover with lid. Cook in low flame for 5 more  minutes.
 add now coriander+cumin powders,finally add cilantro leaves and mix.serve with rice or rotis along with lemon wedge and onion slices.
