My 5 years old Mahadev is pure non vegetarian same like papai..last 2 weeks back he strongly asked for chicken curry..When I browsed web for famous south indian chicken recipes,a name called nilgiri chciekn kurma attracted  my eyes..Without doing late,browsed for recipe in youtube n web..I want to cook it perfectly without ruining its originality.It`s not fair to spoil the recipe which si very popular..I admire some times,where my lazy ness goes while brwosing for long times,just for a single recipe...:)

Baked chicken koftas biryani/baked indian meat balls/Murgh kofta biriyani/south indian biryani recipes/Sunday non-veg lunch recipes


I cooked this chicken kofta biryani last month ..Every time Iam post poning this because of this long notes..Along with this the same day,I prepared boiled egg kurma too..Hmmdon1t know what happend to my lappy..I upload new pictures every time in new folder.But ,I missed few pictures recently..Hmm..I missed that egg kurma recipe pics too..Anyway what I want to tell is,careful with your pictures..after uploading them as soon as possible edit and shift into blog...

Coming to the recipe,long time back i posted deep fried chciken koftas gravy recipe..Those koftas are perfectly deep fried and its a popular recipe in my Mahaslovelyhome....This time Instead of deep frying I baked koftas without a tbsp of oil and they are very healthy...Baking time is little bit lengthy but its worth to try..If you are true chicken lover/biryani lover must try this recipe......here I gave steo by step pictures which helps you..Try it and share your results...

PREPARATION TIME- 60 MINUTES
COOKING TIME- 40  MINUTES


WHAT YOU NEED

TO MAKE KOFTAS

Bone less chicken-250 grams
salt
red chili powder-to taste
turmeric powder-1/2 tsp
black pepper powder-1/2 tsp
corn flour-2 tbsp
fresh cilantro leaves-few
curd-1/4 cup
garam masala-1 tsp
ginger garlic paste-1 tsp
lemon juice-1 tsp


HOW TO COOK
HOW TO MAKE CHICKEN KOFTAS

Wash chicken twice and chop into pieces.grind finely using sharp blender.Don`t use fruit juicer..

take this soft blended minced meat in a bowl and add all spices which mentioned above.

Take lemone size meat and make it like a ball.Roll like these til completes meat..

Preheat oven at 200 degree C.Line aluminium foil in tray or glass bowl and place meat balls.

Bake for 20  minutes and turn them other side.again bake for 20 minutes atleast..check out with tooth pick finally..

Your koftas are ready now..






WHAT YOU NEED

TO MAKE CHICKEN KOFTA BIRYANI

FOR RICE

Basmati rice-2 cups
salt
oil-1 tsp
bay leaf-1
cloves-3
cardamom pods-2
cinnamon stick-1 small


TO MAKE CURRY YOU NEED

onions-2 big
capsicum/green bell pepper-1
tomato-1 big
curd-1/3 cup
oil-1/4 cup
butter-1 tbsp(optional)
kasoori methi-1 tsp
salt
red chili powder-to taste
turmeric powder-1/2 tsp
garam masala-1 tsp
ginger garlic paste/GGP-1 tsp
1.cloves-2
2.fennel seeds-1 tsp
3.cumin-1 tsp
4.cardamom pods-1
5.cloves-2
6.staranise-small
7.mint leaves-1 cup
cilantro leaves-1 cup
food color-2-3 pinches
water-1/4 cup


HOW TO COOK

Wash and soak rice for 30 minutes...Heat a vessel with enough water...Add rice when water starts boiling...

Add salt and other ingredients which mentioned under FOR RICE..Cook rice 70% and drain in colander..

Heat a pressure cooker with 1/4 th cup of  oil and fry sliced 1 onion until brown..then remove fried onions and add spices from 1 to 7..Saute well and add chopped onions..Saute fro 2 minutes..

Then add capsicum and mix well.Cook for 2 more minutes again..now add tomatoes diced and let ity cook fro 2 more minutes..Add chicken koftas this time and spice powders..

Chili powder,salt,garam masala,GGP,kasoori methi and finally curd..Combine every thing well and cook for 5 minutes in low flame.

now add rice on top of this meat balls curry mix and put flame low first..On top of the rice add mint and cilantro leaves,fried onions n color water..

spread rice again on top and do the same process again..Pour food colour well and if you like can add add some ghee and dry fruits and nutsfor rich taste.

Heat tawa now and on top put this cooker and cook for 10-15 minutes in low flame..


Once after turn off let it sit for 15 minutes..then open.mix carefully and serve hot with lemon wedge,raita and any gravy...

Shahitukda/ Hyderabad Popular desserts/Indian famous sweets/Indian bread pudding in milk/Step by step pictures


Shahi tukda is a popular Indian dessert which is came from pakistan..Double ka meetha and shahi tukda looks same and people often confuses with this two desserts..But double ka meetha is which folded with braed slices in sugar syrup along with milk and some ghee..Here in shahi tukda we deep/shallow fried the bread pieces in ghee and then will dip in sugar syrup and later in thick milk syrup which is called rabri... 

It is a very famous dessert in hyderabad..even though iam familiar to this one,got chance to make it in the last week only...Try this simple,lip smacking dessert in parties or get to gethers..It`s easy to make and definitely gets a huge success too..


CATEGORY-EASY DIWALI SWEETS/HYDERABAD FAMOUS DESSERTS
PREPARATION TIME- 20 MINUTES
COOKING TIME- 15 MINUTES


WHAT YOU NEED

white bread slices-6
sugar-1 cup
water-1/2 cup
3% fat milk-3 cups
ghee or butter-3 tbsp
almonds+cashews+raisins-5+5+5
cardamom powder-1 tsp
saffron or yellow food color- a pinch





HOW TO COOK

Cut edges of bread slices and cut them into half..Like in picture...traingle shape.Heat ghee or butter in pan and shallow fry the bread pieces..

Then add 1 tbsp more ghee and fry nuts and raisins..Now heat milk and stir in between until reduce..turn off and finally add food color..

Now prepare syrup..add and water in a bowl and make syrup..Now start layering the bread...

First take a square or rectangular shaped glass bowl.. Dip bread slices in sugar syrup and arrange them in glass bowl...

Before serving,pour thick boiled milk which is called rabri,on top of the bread slices.Throw all the ghee roasted nuts and serve ..

It is a paratha which is folded with ricotta cheese which is called paneer in common..It is not a stuffing type of paratha so easy to make really..I love to experiment different paratha recipes with different stuffing and blendings.I used store bought paneer but you can use fresh home made paneer too..

Cabbage soup/Diet cabbage soup/Loss 1 kg in one week/step by step pictures/Mahas own recipes


WHAT YOU NEED

Cabbage shredded-2 cups
green bell pepper/capsicum-1
onion-1 small
olive oil-1 tbsp
red chili flakes-to tastesalt
oragno-1 tsp
tomato-1 big
water-5 cups

 
HOW TO COOK

heat oil in vessel and saute onion well...Now add cabbage and saute well.Add salt and cook it for 3 minutes and add bell pepper..Mix and cook for 3 more minutes..

(You can use carrot grated too)

Then add tomatoes diced and cook for 2 more minutes.Add chili flakes and  water or vegetable stock now and boil it for 10 minutes in low flame.

finally throw oregano and turn off.Serve hot..



NOTES

It is my very own recipe.which I tried with my own Idea..

The reason behind writing "Loss 1 kg in one week" is,cabbage one if the finest vegetable for weight loss.Soups helps us to loss weight easily more tahn the other dishes.

When I came to know this point,tried this soup and had it..Its yummy when tastes hot and feels tummy filling..

If you want to lose weight take this soup daily once or twice by mixing other vegetables once at a time and have it..Also,you should drink water 3-4 litres,take fruits except banana and avocado.One more important point,physical work.Like,exercise,walking,jogging etc..

Along with this I took fruits,lots of water,very less rice and went for walking for 4 Km daily..I lossed 1 kg in one week.

Believe me.It`s workouts...You need self confidence,control on tongue and poitive thought.Definitely you can achieve...

Mushroom coconut milk masala/Mushroom masala for rotis/step by step pictures


Mushroom is my favorite..Hmm...But,DH don`t likes it except in soups..Why??god matches,opposite minded people??Hahahaha..But,he never interfers in cooking/kitchen matters..Lucky na...Ok.Ok...Let`s talk about this recipe...I cooked this last week and served with rotis...Here I used coconut milk for rich taste and remaining recipe is simple...Coconut  milkgives rich taste to the dish and use good quality always..You can add tomato puree instead of chopped pieces..Always use ripe tomatoes in this kind of gravy dishes..Mushroom likers must try it.Iam sure you will love it..


CATEGORY-VEG GRAVIES
PREPARATION TIME- 15 MINUTES
COOKING TIME-20 MINUTES

WHAT YOU NEED

Mushrooms sliced-1 1/2 cups I used canned
onion-1 big
tomatoes-2 big soft n ripe
ginger garlic paste-2 tsp
coconut milk-1 1/2 cup (200 grams)
salt
red chili powder
turmeric powder-1 tsp
garam masala-1 tsp
cumin+coriander Powders-1+1 tsp
dry kasoori methi leaves-1 tbsp
cilantro leaves fresh n finely chopped -2 tbsp
oil-2-3 tbsp
cumin-1 tsp
fennel seeds-1 tsp
cloves-3
cardamom-1


HOW TO COOK

Heat oil and saute fennel seeds,cumin,cloves and cardamom..Then add chopped onions and saute til soft..

Then add very finely chopped tomatoes and mix..Now add all spice powders.salt,red chili powder,turmeric,ginger garlic paste..Mix all every thing well and cook for 2-3 minutes..

Once after turning mushy add drained sliced mushrooms and combine every thing..Cook for 5 minutes in high flame..

Now add coconut milk and stir well..Cook it for 10 minutes in low flame...

Then add kasoori methi and stir it.After 2 minutes turn off and throw cilantro leaves.

Serve hot iwth rotis/pulkas.

Phool Makhana paysam/Lotus seeds kheer/Easy south indian sweet recipes/step by step pictures



Phool makhana means lotus seeds..This phool makhana don`t have any flavor and taste..I bought this in Indian in my last visit..My laziness postponing  all the time to try recipes..But last week,when Iam tempting to eat some sweet,remembered this phool makhana..Immediately tried this kheer.Until before tasting it,I was in confusion about the taste of phool makhana.Hahahaha!! Actually after pan roasting seeds turns soft..They may looks like  hard balls..but no..Originally this lotus seeds are very flabby and tasteless.When u fold them in dishes while cooking,gives the rich taste...


CATEGORY-KHEER RECIPES/EASY PAYASAM RECIPES
PREPARATION TIME- 10 MINUTES
COOKING TIME- 15 MINUTES


WHAT YOU NEED

Phool makhana seeds/Lotus seeds-2 cups
white sugar-3/4 cup
cardamom powder-1 tsp
cashews+almonds+raisins+pistachios-5+5+5+5
milk-3 cups
ghee or butter -2 tbsp


HOW TO COOK

Heat 1 tbsp butter or ghee in pan and roast phool makhana for 2-3 minutes.Crush few seeds and keep aside and them.add 1 more tbsp ghee or butter and roast dry fruits..

Now Heat milk in bowl/vessel and start stirring...Add in sugar and stir for 5 minutes..Milk becomes little bit thick..

Now add crushed phool makhana and stir it well.After 5 minutes add cardamom powder..

Finally cook it for 2-3 minutes and turn off.Add saffron if you like.Serve hot or cold..
