Curd rice is one of my favorite one pot meals to have any time...To bring a change on regular curd rice Iam trying new varities....Already posted carrot curd rice,Beet root curd rice,oats curd rice and now this is dry fruits n nuts curd rice...Isn`t that sounds delicious??
Yeah..It is a curd which folded with lots of dry fruits and nuts whcih are sauted in oil..But,I suggest to use ghee which brings a rich taste and flavor to the rice..One day,in the afternoon time when I was feeling hungry,created this recipe unexpectedly..I would like to say thanks to my fridge here,which helps me in cooking by saving all the ingredients in her tummy..Hehehehehe.....is n`t this sounds silly..:)

PREPARATION TIME- 15 MINUTES
COOKING TIME- 10 MINUTES


WHAT YOU NEED

Cooked white rice | Left over rice- 2 cups
salt
Yogurt | curd | Perugu- 2 cups
boiled milk-1/3 cup

TO TEMPER

Oil-2 tbsp Or Ghee
cumin seeds-1/2 tsp
mustard seeds-1/2 tsp
dry red chili- 3-4
hing/asafoetida/inguva powder -2 pinches
cashews 5-6
almonds-5-6
pistachios- 5-6
dried apricots -3
curry leaves-5-6
raisins/kismis -5


HOW TO COOK

First take rice in bowl and add salt,curd and warm milk.....Mix nicely with spoon and rest it for 15-20 minutes.

Now turn on heat and add oil or ghee in pan ...Throw the ingredients one by one which given under oil and fry well...

Fry nicely for 5 minutes in low flame and add into rice...Mix every thing well and serve...If you have time,refrigerate for 30 minutes and serve...Tastes super ..

If you want can add any nuts and milk is optional..Serve with any pickle If you like..
