CHOCOLATE COFFEE CAKE/SNACK CAKE FOR KIDS/BUTTER MILK OLIVE OIL COFFEE CAKE USING CHOLATE VERMICELLI




CATEGORY-BAKING/COFFEE/CHOCOLATE
PREPARATION TIME- 20 MINUTES
COOKING TIME- 35 MINUTES


WHAT YOU NEED

All purpose flour-1 3/4 cups
sugar-2 cups (or 1 1/2 cups)
baking soda-2 tsps
baking powder-1 tsp
chocolate semiya/shaves-3/4 cup-1 cup
eggs-2
butter milk-1 cup
vanilla essence-1 tsp
fresh brewed coffee-1 cup(freshly prepared coffee with hot water)
olive oil or canola oil-1/2 cup


HOW TO BAKE

Mix all purpose flour,baking soda,baking powder,sugar and mix well..

In this add prepared coffee,oil,butter milk,vanilla and stir well..

Now fold in eggs and chocolate semiya and mix well..

Pre heat oven at 190 degree C.Apply oil to cake tin or glass bowl ( I used square shaped) and pour prepared batter..

Place in oven and bake for 35 minutes.Check with tooth pick and if one turn off.

Other wise bake for 5 more minutes and check again....

Once it is cool,slice and serve.

EASY BANANA OATS PAYASAM WITH COCONUT MILK/SOUTH INDIAN FESTIVAL RECIPES/EASY PAYASAM RECIPES/PAZHAM PRADHAMAN



Iam a sweet tooth girl.Also, I like to experiment with innovative combinations.In the same way,this time I prepared this banana kheer.Til now I used bananas in juices,milk shakes and smoothies but never even imagined in payasam versions.With some hope I tried this kheer by using coconut milk for rich taste and it came out very delicious too..For a variation you can try this kheer. sure you will love it..




CATEGORY-SWEETS/BANANA/OATS

PREPARATION TIME- 15 MINUTES
COOKING TIME- 20 MINUTES






WHAT YOU NEED

Ripe bananas-4 medium size
jaggery/bellam-1/2 cup
coconut milk-2 cups
oats-1/2 cup
cardamom powder-1 tsp
cashews+almonds+raisins-5+5+5
ghee-1 tbsp




HOW TO COOK

Mash bananas and keep aside.Heat a pan with ghee and roast dry fruits and remove.

Then in the same pan add oats and roast for 2 minutes in low flame.

Now remove oats and add jaggery and 1 cup of milk. let it boil.

In this add oats and cook for 5 minutes in medium flame.

Then add mashed banana and mix well..keep flame in low and add 1/2 cup of milk.

Cook for 3 minutes and add last half cup milk and stir it.

Finally add cardamom powder.Turn off and add dry fruits..

Serve warm or cool.


MAHAS NOTES

If jaggery is not good add water in jaggery and boil it for 4-5 minutes.then strain it and use.

Replace coconut milk with normal milk.

Add jaggery according to your taste,also,it `s depended on banana sweetness too.

If it looks too thick add 1/2 cup water or milk.

Use sugar in the place of jaggery If you like.

this is a powder which I prepared using cantaloupe seeds...It`s a very spicy and tasty powder which goes well with hot white rice.instead of throwing this seeds try this powder next time and enjoy the taste.

some of the benefits of Cantaloupe for our health,such as;

1.Cantaloupe is a great source of vitamin-A,vitamin-C and beta carotene.It prevents cardiovascular disease.It reduces stress.

2.It`s very useful in improving lung health for smokers.

3.it`s super food for skin because just one serving is an excellent source of vitamin-A and C.

4.it is a good for complexion and digestion.

5.It has potassium.it helps in re balancing the heart beat and sends oxygen to the brain and regulates the body`s water balance.

6.It has high content of folic acid,which prevents neural tube defects in infants.


WHAT YOU NEED

Cantaloupe seeds-1 cup
dry red chili-5-6
salt-to taste
hing-2 pinches
garlic cloves-2


HOW TO COOK

heat on pan and dry roast seeds first..

Then add red chilis and saute for few seconds.

Finally grind into fine powder by adding salt and garlic cloves.

Serve with hot white rice along with ghee.

I GROUND IT COARSELY BUT FINE POWDER TASTES GOOD..

It`s a special day.We couple celebrating 7th wedding anniversary today.This year I baked fruit cake and it`s one of my favorite too.Fruit cakes are very rich in taste and to make it more healthy I added honey,olive oil and it`s egg free.First time I used rum in this fruit cake and it`s just delectable and  amazing in taste..After chocolate cake and carrot cake I gave choice to dates cake..Now fruit cake also joined in my list...Hehehee..let`s see..which one is going to take place the 5th one...!!!


Coming to the cake recipe,this was the one of the cake recipe which gave a lots of pain to me.I mean headache.Spent almost half of the day for a perfect fruit cake recipe and that too I want to make it healthy.After reading in wiki about rum added fruit cake,I was so curious to try and almost I used all types of dry fruits and nuts which bought specially for fruit cake.But the amount of soaked whole nuts is high and minimum 2 cups are better to use for medium size cake.I kept remaining soaked nuts box in refrigerator.Very hardly and honestly I worked out for this cake and each and every measuring is given exactly how I used...But after all,hard work and sincere always gives a best result like which I got in this cake form.Adding honey and oil in this cake is the unique point which attracts you all..I bet you never goes for another version if once you tried this.Try next time when your kitchen loads with full of nuts and tell me about the result..

PREPARATION TIME- 30 MINUTES
COOKING TIME- 1 HOUR 20 MINUTES






PREPARATION OF SOAKING DRY FRUITS AND NUTS IN RUM

Total mixed chopped dry fruits and nuts-5 cups
I used cashews,almonds,black raisins,brazil nuts,walnuts,tutti frutti,golden raisins,dried prunes.(other nuts)

Actually the exact measurements are,
 tutti frutti is -100 grams
other nuts -2 cups
dried chopped figs-100 grams
black raisins-100 grams
dried chopped figs-100 grams
canned cherries without syrup-10
RUM-2 cups
So,after measuring total - 5 cups of dry fruits and nuts

I soaked totally 3 days.Used 2 cups of nuts and refrigerated remaining in box.



WHAT YOU NEED

Wheat flour-2 cups
full cream milk-1 cup
honey-1 1/2 cup
olive oil-1 cup
baking powder-2 tsp
baking soda-1/2 tsp
vanilla essence-1 tsp
cinnamon powder-1/2 tbsp
rum soaked dry fruits and nuts-2 cups

MAKE A FINE POWDER
cardamoms-3
 cloves-3



HOW TO MAKE

Take a big bowl add milk,oil,honey,vanilla.Mix once.Make a fine powder of cinnamon and cloves.

To this add wheat flour,baking powder,soda,cinnamon powder.combine well..

Fold in soaked fruits and mix every thing well..

Take a cake pan and apply oil and dust it flour in all sides.It`s very Important.other wise cake and nuts sticks to pan.

Preheat oven at 180 degree C.Place cake tin and bake for 60-80 minutes.(may be 1 hour 15 minutes)

Check with tooth pick and turn off.other wise bake for 5-10 minutes more.

Then cool it on wire rack and slice n serve..

EASY MANGO COCONUT DESSERT/EGGL ESS MANGO DESSERTS/SIMPLE NO COOKING MANGO SWEETS IN 10 MINUTES/MID NIGHT CRAVINGS



PREPARATION TIME-30 MINUTES
SERVES-2

Ingredients

Fresh Mango Pulp/Puree-1 cup
mango chunks/pieces-1 cup (or use mango pulp)
coconut milk-1/2 cup
coconut flakes-1 tbsp(opt)
sugar-1/2 cup


HOW TO COOK

In a blender take mango pulp,coconut milk,sugar and blend til smoothy.

Take this in glasses and add mango chunks..

Top with coconut flakes and refrigerate for 20 minutes.

Serve chilled mango dessert..

OATS CARROT JAGGERY PONGAL/NO MILK SWEET PONGAL/SOUTH INDIAN FESTIVAL RECIPES/OATS BELLAM PONGALI/SANKRANTI RECIPES/MAHAS OWN RECIEPS



This is my own Idea of making pongal by using oats and carrots as main ingredients.It may sounds weird for you all but tastes really good.Try this next time instead of making regular pongal in your kitchen and enjoy healthy pongal.


CATEGORY-SWEETS/PONGAL RECIPES
PREPARATION TIME- 15 MINUTES
COOKING TIME- 15 MINUTES


WHAT YOU NEED
Oat meals/granules-1/2 cup
carrots-2 small
jaggery-1/2 cup
moong dal-1/4 cup
cardamom powder-1 tsp
raisins-6
almonds-6 chopped
ghee-1 tbsp 



HOW TO COOK

Wash dal and soak in water for 15 minutes then Chop carrots and combine both and pressure cook in medium flame for 10 minutes.

Heat pan with jaggery+ enough water and let it boil in low flame..In another pan take 1 tbsp ghee and roast  ghee and roast raisins and almonds.Remove those and roast oats in the same pan and keep aside.

Now add this pressure cooked dal in jaggery syrup and mix well..also add oats and cardamom powder and cook for 5 minutes in low flame. 

Finally add ghee roasted nuts and turn off.Serve hot with topping of fresh ghee if you like..

2 MINUTES MICRO WAVE EGG LESS VANILLA TUTTI FRUTTI CAKE/MICRO WAVE CAKES/EGG LESS BAKING/EGG FREE VANILLA CAKE IN MICRO WAVE


It`s microwave vanilla cake with a touch of TUTTI FRUTTI .I used only two colors tutti frutti here.But using different color tutti fruttis in cakes results beautiful.Instead of glass bowl you acn use micro wave safe plastic bowl also..Try this next time and enjoy.


WHAT YOU NEED

all purpose flour-4 1/2 tbsps
sugar- 2 tbsps
vanilla essence-1/2 tsp
baking powder-1/4 tsp
milk-3 tbsp
salt-pinch
butter-1tbsp
tutti frutti-2 tbsp


HOW TO BAKE

Mix flour,baking powder,sugar,salt in a bowl.

Add milk,melted butter,vanilla to this dry ingredients.

Now throw some tutti frutti and mix well..

Grease glass bowl with oil or butter and pour this cake batter and micro wave for 2 minutes..

Then check it with tooth pick..If it looks still moist micro wave for 30 seconds more and turn off.

Pour some condensed milk or dulce de leche on top and enjoy..
