Ambur Style Chicken Dum Biryani | South Indian Dum Chicken Biryani Recipes | Non-Vegetarian | Easy Chicken Biryani Recipes


Biriyani is one of the popular indian food which is favorite of all almost..Iam one of the hardcore fan of biriyani,who loves to try/taste all kind of biriyanis..Habitually,I prefer biriyani to cook on sunday.Til now I have tried ten biriyani recipes I think..I feel,exciting to try traditional,authentic recipes mostly,because through my blog it going to introduce to more viewers.. But these days Iam not getting chance to cook..This recipe also very old one which I tried in november I think..
Hahaha..means almost after three months Iam sharing it.Don`t know why..Some recipes stays in draft for so many days/months..even after opening those recipes to write,again goes back to draft..hehehehhe..Though this is a popular recipe,my laziness kept it til now in draft..O.k..no problem.."Biriyani" the word itself brings an unique energy on face..So,I can say definitely this recipe brings a big smile on your face,if you are mad lover of it ...Don`t miss to check the complete recipe,try and enjoy..:)


CATEGORY-MAIN COURSE/CHICKEN/BIRIYANI
PREPARATION TIME- 30 MINUTES
COOKING TIME- 50 MINUTES



INGREDIENTS YOU NEED 

chicken(with bones)- 500 gms or 13 medium size drum sticks (I used)
GGP/ginger garlic paste- 1 tbsp
mint leaves-handful
cilantro leaves fresh-handful

onions-2 med size
tomatoes-1 big
black cumin-1 tsp

SPICE POWDERS

red chilli powder-1 tsp
salt-to taste
turmeric powder-1/2 tsp
coriander+cumin powders-1tsp+1 tsp
garam masala or biryani masala-1 tsp
warm milk-1/4 cup
orange/yellow food color-2 pinches


TO COOK RICE YOU NEED
basmati rice-2 cups
oil-1 tsp
cumin-1 tsp
cinnamon stick-1 inch
fennel seeds-1 tsp
salt-little bit or 2 pinches
cloves-3
cardamom pod-1
pepper corns-5-6(optional)
bay leaf-1 small


HOW TO COOK


Wash and soak rice for 30 minutes..Now heat a big vessel with enough water and add in whole spices which mentioned under "TO COOK RICE YOU NEED"..When water starts boiling add in rice and cook til 70%. rice should be half cooked at least but not completely..

Turn on heat under a vessel..Add oil..Fry whole garam masala ingredients+GGP..Saute well and add chicken..Mix and set it evenly in vessel..Then throw in onions,tomatoes,cilantro+mint leaves..

Now add in all spice powders.Stir together.Cook for 15 minutes in medium flame.Add in one big size of butter piece..Cook until chicken half done..You can add some water in between to avoid burning..

{*Here in my recipe,it turned little bit thin gravy..So,I removed out chicken pieces in another bowl,and cooked gravy for another 10 minutes to reduce it,then added chicken pieces again..*}

When the chicken is almost done,Add in cooked rice on top..Pour in saffron (yellow) color milk,spread mint + cilantro leaves..Close it with lid tightly..

Put it on dum method and cook for 15 minutes in low flame..Turn off and serve hot with any gravy,raita,onion slices,lemon wedge.



MAHAS NOTES

After a long research,I find out this exact process of ambur style chicken biryani..If,any know 200% original recipe,please share..;)

Don`t cook chicken completely.You are going to cook on dum again for 15 minutes.So,cook chicken 50%.

You can sue saffron .mix in milk or water..I used yellow food color.

Adding butter gives a rich taste.

This is one of the easiest biryani among all the biriyanis..Try it definitely..

If the pan is,too thin (which you use for dum) cook for 10 minutes ..

See...Need patience and experience to cook a perfect biryani. Even,I was so tensed in the early days,I can say proudly now,became so perfect in cooking...So,don`t be tense..just a give try..
