Carrot Cashew Kheer With Condensed Milk | Sugar Free Carrot Kaju Payasam | Gajar ki Kheer | Easy Healthy South Indian Payasam Recipes


This is a very old post which is in draft from one year almost...every time I was avoiding it to write because of these un named pictures.Even now also,posting same like that..happens some times..Ok..Lets talk about recipe little bit..This a carrot kheer which is also folded with cashews...
In this recipe,Instead of sugar I used only condensed milk and ,it is the major difference when you compare with other kheer recipes..In This iam not sharing teh step wise pictures as I told early already that it was old post..But,definitely,will update the step by step pictures soon.This kheer is rich in taste also,can cook quickly in short time...Must try this version next time..

WHAT YOU NEED

5 cups 3% fat milk
3 small Carrots
1/2 cup cashews
1/2 cup Condensed milk
Cashew & Almondsfinely chopped (to garnish(optional))
1/2 tsp Cardamom powder
2 tbsp Ghee


HOW TO COOK

Soak cashews in 1/2 cup milk for 30 minutes at least..Wash,chop and grind carrots coarsely in mixy jar.Also,separately grind cashews into fine paste..

Now in a vessel add ghee and roast this ground carrot mixture for 2 minutes..Remove carrot on a plate and add milk in it..

When milk starts boiling add ground carrot mixture+ cashew paste and cook for 10 minutes in low flame..Now add in condensed milk and mix well..

Stir in between to avoid burning.After 5 minutes add in cardamom powder and stir to combine well..Cook for 10 more minutes in low flame and turn off..

You can ghee roasted nuts like cashews,almonds,chironji,raisins,pistachios..Serve warm or cold..
