Coconut Masala Chicken Curry | Chicken Coconut Milk Gravy | Boneless Chicken South Indian Curries | Kodi kura with Kobbari Masala


This is a simple chicken curry with home made masala paste..The ingredients which I have used here,are almost available in your pantry and according to my taste I created this recipe..It goes well with rotis more than the rice..I used boneless chicken,but boned chicken also works out well.I used store bought coconut milk,which is not too thick and added water to make it like gravy...
We are all already adding,whole garam masala items in masala paste,so it`s not necessary to saute in oil again while cooking chicken.Try this next time and enjoy with rotis..

WHAT YOU NEED

Chicken boneless- 300 grams
onion-1
coconut milk-1/2 cup
cumin-1/2 tsp
red chili powder- 2 tsp
salt-to taste
turmeric powder -1/2 tsp
garam masala -1/2 tsp
cumin+coriander powder-1/2+1/2 tsp (optional)
ginger garlic paste/GGP-1 tbsp
oil-2 tbsp


FOR MASALA PASTE

Dry red chili-3-4
coriander seeds-2 tsp
gasagasalu/khus khus-1 tbsp
coconut powder-1/2 cup
cloves-3
cinnamon stick-2 inch"
black pepper corns-1 tsp
cumin-1 tsp


HOW TO COOK

Wash chicken well and if you have time marinate with salt,red chili powder,turmeric powder,GGP,lemon juice 1 tbsp  for 30 minutes.If you are using marinated chicken in the recipe adjust the spice powders quantity while cooking.Or you can use fresh chicken directly..

Dry roast the ingredients carefully which mentioned above in the list,without burning and keep aside..

Now on the same fry onion til brown in color and along with the above masala ingredients+GGP grind into fine paste.Use 1/3 cup of water..

Turn on heat under a non stick pan,add oil..Throw cumin seeds,after half minute add in ground masala paste..After a minute red chili powder,salt,turmeric powder,garam masala and mix well..Cook for 2-3 minutes and throw chicken..

Stir every thing well, add in 1/2 cup of water and cook for 10 minutes in low flame..Now add in coconut milk and cook for 10 more in low flame.

Turn off,throw cilantro leaves and mix well.Serve hot with rotis/parathas/pulka..
