Friday a With Friend Guest Post by Shailaja Sen | Roasted Eggplant Chutney | Kalichina Vankaya Pachadi | Instant Baigan ka bhartha


It`s time to guest post...Today we are going to meet shailaja who blogs at shailajas passion..We met in fb and later came to know that we are from same college..shailaja is my senior from the same college where I finished my degree..Also,we both are from same place and same mother tongue..
In this blogging I got so many friends,but found very few telugu bloggers.In that shailaja is one of the person who is close to me.Iam really happy to introduce her to my viewers through Mahaslovelyhome..I think it will be so nice If you read her words..lets go into the post..

1.Few words about u/some thing special which we don`t know??
Iam shailaja doing blogging at shailajas passion since from one year and my passion is to cook different cuisines and i love to do blogging...

2. 3 Food photography tips or  3 useful kitchen tips??



Well iam just new bee to this blogging world and i know just basics in photography and iam just improving my skills day by day by observing lot of food photos, some of  tips that iam posting today for photography, presentation is the most important for food bloggers and please click photos during day time only and use good food props for food photos as props play a major rule in food photography.

3. How to imporove fans n followers for food blog n food bog face book page??

To improve fans to blooging is do posting in unique way and keep blogging atleast twice in a week and keep in touch through social networking sites like facebook ,pinterest,google plus so that we can get more likes ...

4.How food blog changed ur life?How many recipes your posting in a month approximately and your memorable moments which related to blog??

Blogging became a part in my life and i entered into new passion,once i entered into this world i got so many friends and i have been cooking lots of recipes and yes iam improving myself a lot for blogging .

5.Finally,tell me few words abt MLH??

Mahas lovely home is a unique blog and i just wonder sometimes how she blogs daily i really appreciate her divinity for blog ..


Coming to this recipe iam posting eggplant chutney as a guest post for usha who blogs at mahas lovely home,the smoked flavour of egg plant gives a unique taste to this chutney and i like this chutney alot since from my childhood as my mom prepares alot and baingan is my favourite vegetable to me and we can prepare stew also with this roasted eggplant .It is quite similar to baingan bharta  but a litttle bit difference is there ,in baingan bharta as  we just add chopped tomatoes and onions ,and iam sure everyone will likes when it is ready this chutney tastes good with rice and even it goes well with rotis also.. 

INGREDIENTS:  
Egg plant/aubergine           : 3 
green  chillies                            : 3 to 4 
tamarind                         : small size 
red chilli powder               : 1 tea spoon
to temper 
jeera                  : 1/4 tsp
curry leaves           : 1 sprig
asafoetida/hing     : pinch
green chillies        : 3 to 4 split into small pieces

METHOD:
1.Apply oil to eggplant and keep eggplant to flame ,as charcoal is used for it but nowadays everyone is using a barbeque  or stove { u can use oven also to roast eggplant also} .
Heat for a while.
2.When its get completely cooked and changes its colour to dark black colour ,then remove from fire and peel  the outer skin of eggplant and take the inner pulp into a bowl and mash it with fork.Do the same process with other eggplants also.Mean while soak tamarind in hot water and take out from water and add salt ,chilli powder,and tamarind pulp and green chillies grind for a few seconds,be careful not to over grind because the taste will not be good if its be over grinded .


3.Now heat a pan and put some oil and add cumin seeds and split green chillies and add curry leaves and lastly add hing and after its get heated switch off the flame and pour oil into eggplant mixture .
