PREPARATION TIME- 30 +30 MINUTES
COOKING TIME- 30 MINUTES

WHAT YOU NEED
  • Long, Stout Green Chilies – 8-10
  • Tamarind – Gooseberry Sized
  • Carom Seeds/Ajwain/vamu – 1 1/2 tsps
  • Chat masala-1/4 tsp
  • red chili powder-1/ tsp (optional)
  • Salt - To taste
  • Gram Flour/chick pea flour/senaga pindi – 1 Cup
  • Baking Powder+soda – 1/4 tsp+1/4 tsp
  • Oil To Deep fry

HOW TO COOK

Soak tamarind for 15-20 minutes..With carom seeds, salt, red chili powder, chat masala grind into fine paste..

Wash green chili and slit in length wise and remove seeds..Now fill it with 1 tsp of above tamarind paste..

Arrange all these and another side pour around 300 ml of cooking oil in a kadai or deep frying pan..

Now prepare batter to dip this chillies..In a mixing bowl take chickpea flour, salt, baking soda..With water make it like fine batter..Don`t pour water at a time, batter turns too thin.so,better to go spoon by spoon.

By this time, oil turns hot..Check out by dropping a drop of batter..If it pops up immediately then switch off the heat and let it cool.

Now dip the prepared chilies in the batter and drop them in the oil and fry on medium heat. Fry till golden brown. Fry them in 2 batches, instead of filling the kadai..

When done remove them on to the paper napkin to remove excess oil. Serve them hot with ketchup for kids or you can serve spicy chutney..

Another serving tip-  Cut bajjis into round slices and take them in a big wide bowl..On top add very finely chopped onion,2 pinches chat masala, one pinch of salt, pepper powder if you like and serve hot..
