Hey..friends..Hope you all doing great..By the way,I started going to driving classes recently..So,it`s little bit difficult to check out all of your blogs regularly.Still,I will try to look in..In the first and second classes was totally nervous and hands started trembling when iam trying take turnings.According to the instructor words,usually in 20 classes can be perfect in driving.later it takes some time like one year to drive on roads easily with ease.
I hope,that I can learn in short time without much inconvenience.I suggest to all girls to learn driving which is very essential in this present busy life style.not only driving..Basically,I don`t have any plans like, flying out side of the country before marriage.so,never concentrated on driving,spoken english,higher studies. But surprisingly, according to god play, got married and moved to brasil..First faced language problem in foz and then pregnancies,that too c-sections.So,there was no time to learn any thing and til now leading a quite busy life in mom position.Though Iam not too interested to learn on hubby force,decided to concentrate on driving so,it`s continuing right now..Even,today also finished one hour class and writing this post after reaching home.

Ok..Lets focus on today`s guest post..Today we are going to meet Ranjani our co blogger who is a good friend of mine in blog world. She is very simple,humble and honest working blogger...First,I visited her blog casually and started visiting often. She shares different and delicious dishes in her space and you will definitely drool on seeing her post.When I approached her for a guest post,she immediately agreed and asked me whether i need something in particular for my blog.Though I have all kind of categories recipes  in MLH I left it to her choice.Surprisingly,she sent a mail of red velvet cup cakes recipe which my blog don`t have.Such a sweet treat for me..So,why you are doing late..Check out the simple chit chat and recipe too.


Few words about u/some thing special which we don`t know??

I am Ranjani Raj , an author, designer, and photographer behind the blog “Ranjani’s Kitchen”. Other than that I am working as a technical associate in a private concern. As a stress buster , I started my food blog. Now I earned numerous friends, always surround me with utmost care and love.This  space explored me to know world cuisines as well.

Food photography tips or 3 useful kitchen tips??

a)      Use natural light for better food photos.
b)      Most importantly, don’t use flash for clicking your food photos. It may work out for portraits,but not in food J
c)      Try photos in different angles and select the best ones to post. Do not worry to take numerous snaps. It will teach you which is best angle and after some days you will be a master in it.


How to improve fans n followers for food blog n food bog face BOOK page?

I am sorry if am not answer exactly for the question. According to me, I have no idea to improve fans. Best contents, photography and recipe measures will give you returning visitors.

How food blog changed ur life?How many recipes your posting in a month approximately and your memorable moments which related to blog??

Food blog took my life to some vast distance which I did n’t imagine I can say. I never thought, I could earn number of new friends here. Also in technical aspects like writing, photography and recipe development everything goes to next level from the usual one.
As I am a full time worker, I don’t have straight graph on my posts. It may vary depends on the time which I get. But I always try to post more than 10 recipes per month.
The memorable moment in this blogging journey is, the first compliment which I got from a fellow blogger for my food. And the first cookery show aired in television J

Finally,tell me few words abt MLH??

Usha is a wonderful girl, who initiated share 4 share in fb . And she is a person who wants to give space for others to grow. Its really a iconic character which you have Usha. Keep this throught your life.

Eggless red velvet muffins is in my to do list for long time. When Usha asked me about the guest post, I thought of doing something special and colorful. This velvety cupcakes strikes in my mind. But sorry Usha , I took very long time to send you the recipe. I was stuck with office works. Somehow I manged to prepare this delicious cake and it turns out awesome. Thanks a lot for the chance of being your guest in your place. Its really mean a lot to me J

Eggless Red Velvet Muffins | Cupcake recipes 


Dry Ingredients:
All purpose flour (Maida) – 1 cup
Cocoa powder – ½ cup
Baking powder – 1 tsp
Baking soda – 1 tsp
Powdered sugar – ¾ cup
Red food color – 1 tsp

Wet Ingredients:
Milk – ½ cup
Curd – ½ cup
Oil – ½ cup
Vinegar – 1 tbsp
Vanilla essence – 1 ½ tbsp


Method:
  1. In a bowl, add milk and vinegar, let it sit for 10 mins. You can see it becomes curdle. Now keep this aside.
  2. Grease the muffin pan with butter or oil and place the muffin liners on each cup.
  3. Pre-heat oven to 180 degrees for 10 mins.
  4. Sieve the dry ingredients all purpose flour, baking powder,baking soda, cocoa powder and sugar together.After sieving give a quick mix using dry spoon or fork or whisk. This is to mix all ingredients well.
  5. In a wide bowl, add the wet ingredients that is oil, curd and vanilla essence. Beat this well using a hand whisk or electric beater. Do that until it incorporates well.
  6. To this beaten mixture, add curdled milk and beat again for 2 mins.Then add the sifted flour mix in two shifts.
  7. Mix well using spatula and do not over beat it. Make sure there is no lumps in it..
  8. Now fill the muffin cups to 3/4th using this batter and place it over the base rack.
  9. Bake it for 20 mins . After 20 mins check it using tooth pick. If it comes out clean, its done.
  10. Cool the muffins in wire Rack for 15 mins, then do crèame frosting as your wish.
Notes:
  1. Use powdered or granulated sugar as your wish. We can add sugar while beating the wet ingredients as well.
  2. After adding wet ingredients, do not overbeat. As the baking ingredients will start working fast and the muffins will not raise.
  3. While filling the cake batter, fill it to 3/4th.
