After trying out so many biryanis I took break for few weeks and recently cooked this oven baked biryani..First,I searched out for few popular biryanis asusually, was tired to get a perfect biriyani recipe,So,For a change this time made biriyani in oven..Yeah..That sounds very interesting nah!!...Even,I was very curious about it and also bit tensed about the result.
But surprisingly,it came out so good and perfect..Coming to the recipe,you have to remember  some important points like,marination part,oven timings,temperature,size of drum sticks and rice quality.marinating is very important for good taste and don`t disturb much biriyani bowl when it is in oven..Be patience for 45 minutes and then turn off..temperature is imp,if you keep in high biryani may get burn from bottom or if you keep it in low it takes somre more minutes to cook it completely.So,along with all these tips,check the recipe and try it....

10.BAKED KOFTAS CHICKEN DUM BIRYANI


WHAT YOU NEED

Basmati rice-2 cups
chicken drumsticks/ leg pieces-10-12
onions-2 small
tomato-1big(opt)
green chilli-3 (optional)
red chilli powder-2tspto taste
salt-to taste
turmeric powder-1 tsp
orange food colour-2 pinches
milk-1/4 cup
curd-1/2 cup
lemon juice-1small
cumin powder-1/2 tsp
coriander powder-1/2 tsp
fresh mint leaves-handful
fresh coriander leaves-handful
oil-2 tbsp for marination
1/2 cup for frying onions
butter melted -1/4 cup

TO COOK RICE
Oil-1 tsp
black pepper corns -4
cloves-2-3
cardamoms-2
bay leaf-1 big

TO SERVE

round slices of onion-1
lemon wedge-1
any gravy


HOW TO COOK

Wash the chicken thrice and put slits on top with sharp knife....Chop onions and tomatoes...crush the green chilli like a coarse paste (If you are using)

In a thick bottomed vessel add in cumin,chopped onions,tomatoes,chilli paste and  add all spice powders like-chilli+coriander+cumin+biryani masala,turmeric powder,ginger garlic paste, mint,coriander leaves,lemon juice,yogurt too...mix well..

Marinate this over night or at least 2 hours.. Fry sliced onions in 1/2 cup of oil and take them on kitchen paper towel.

Next wash rice twice and keep aside for 30 minutes.....Boil water  in a vessel and  add the ings which mentioned under to cook rice.. when water starts boiling add rice and cook 70% ,then drain water and keep aside rice in colander...

Now apply oil in oven safe glass bowl (I used rectangular shaped )and add marinated chicken spread it evenly and add rice,spread well on top of the chicken...

Now spread the fried onions,mint n coriander leaves and pour some butter on top for rich taste.(optional). Finally add the food colour which is mixed in warm milk and cover with aluminium foil properly....

Preheat oven at  200 degree C and after 10 minutes the biryani bowl and cook this for 35-45 minutes.

Off flame and remove foil after 10 minutes......Give a good  mix and Serve hot with onion raita........




MAHAS NOTES

If you are using big size drum sticks use big bowl and baking time also will increase..

Better to try  Biryani in small quantity if you are doing it first time.

Marination is imp and rest it over night for best taste.

Don`t cook rice completely and spread it evenly on chicken.

You can see the perfectly cooked drum sticks here in pictures.So, for this size of drumsticks 35-40 minutes is fine.

after turning off the oven,if you feel the rice is too hard or not perfect pour 1/4 cup of water+1 tbsp of butter or oil on top of the rice..carefully mix with fork and cook for 10-15 minutes again.

I don`t measure the ingredients quantities and I cook always with approximate timings.So,please concentrate on your ingredients measurements,chicken pieces size,oven safe bowl size and rice quality..

Last but not least,experience makes you perfect and never loss hope.Keep trying until you get it..Cooking biryani is not a big rocket science...So,be positive and start ...
