Buttery Cauli flower Masala | Gobi Butter Masala | Easy Cauli flower Gravy Recipes | Makhani Gobi | Cauli flower Makhani | Quick and Easy Gobi Masala Gravies


Mostly I prefer chapathi for dinner.So,love to cook every time different kind of gravies ,curries and non-veg recipes..Gobi or cauli flower is one if the finest vegetable to enjoy with rotis..It tastes good in the form of curry,gravy or even fry..This is a rich gobi buttery gravy which cooked with onion tomato base..
Here,I used cooked onions and tomatoes for puree and marinated gobi florets for few minutes after boiling..Marinating gobi is important in this recipe and boiling gobi helps to cook fats.also,it`s good step to do every time with gobi.Marinated gobi and cooked onion tomato puree saves cooking time so,this gravy needs very few minutes if your are with two main preparations..Next time when you buy cauli flower try this gravy for a change and enjoy with rotis.

WHAT YOU NEED

FOR ONION TOMATO PUREE

oil -1 tbsp
cumin-1/2 tsp
cloves-2
cinnamon stick-1 inch
green cardamom pod-1 bgi
fennel seeds -1 tsp (optional)
onion-1 big
tomato-1 big
ginger garlic paste/GGP -1 1/2 tsp (or can use 1 tsp)

To Marinate Gobi

 red chili powder-1/2 tsp
salt- little bit
turmeric powder-1/4 tsp
garam masala-1/2 tsp
cauli flower -1 small size

OTHER INGREDIENTS
 butter- 1-2 tbsp
 bay leaf-1
black cumin-1 tsp
cumin+coriander powders-1/2+1 tsp
red chili powder-1/2 tsp
salt- to taste
turmeric powder-1/4 tsp
garam masala-1/2 tsp
cilantro leaves-few fresh


HOW TO COOK

Cut cauli flower florets in medium size and wash well..Heat water in vessel and add little bit salt..Boil florets for 10 minutes in high flame.Drain in colander and keep aside.

Heat a non stick pan with oil and saute cumin,cloves,cinnamon stick,cardamom pod,fennel seeds for few seconds.. Add in chopped onion,tomato,half GGP and mix well. Cook in medium flame until turns soft..Let it cool and blend into fine paste using mixy jar.

Now in a mixing bowl take little bit of red chili powder,salt,turmeric powder,garam masala,oil and add in boiled cauli flower florets.Mix gently and keep aside this or 15-20 minutes..Resting time is an optional but gives a nice taste to the dish.

Now a heat a non stick pan again with butter and throw in bay leaf,black cumin.. Add in ground onion tomato puree and mix gently.Add red chili powder,salt,turmeric powder,garam masala.Cook in low flame for 2 minutes and add in marinated gobi..

Stir carefully every thing  and add curd after 2-3 minutes.Cover with lid and let it cook for 3 minutes in low flame.

Throw in garam masala,cumin+coriander powders.mix nicely.Cook for 2 more minutes.Turn off and add cilantro leaves if you have..Serve hot with roti/pulka or naan.
