It`s april 23 rd..The day which changed my complete life before 7 years back...Today we couple celebrating  8 th wedding anniversary..It was a journey with smiles,fights,silence,struggles,love,emotions and the beautiful kids who gifted memorable scenes.
I trust in god that, this travel continues for ever with more strength,love and believe.last year I posted super christamas fruit cake which is egg less,butter less,sugar less.Sounds interesting nah..Check out for the detailed recipe then.Though I have few cakes recipes in draft,want to post a out standing recipe which shows we couple amity.So,I choosed this experimental recipe..Proud to say,that it`s my very own creation and sharing on such a special day

Coming to the recipe,Its a simple pudding of quinoa and mango..It`s a old recipe which i tried on my own idea. But,I have a reason behind this particular recipe today...On this special day, I want to post,a recipe which indicates our togetherness. Like,mango is my favorite and the healthy quinoa is hubby`s favorite.So,obviously this is the unique pudding which is our most liking dessert.

PREPARATION TIME-30 MINUTES
COOKING TIME- 20 MINUTES


WHAT YOU NEED

Quinoa
½  cup
Water
1 cup
Mango fruit
1 medium size
Condensed milk
1 cup
3 % fat cow milk or vegan milk
2 cups
Any nuts of your choice/sliced
Fistful
Cardamom powder (optional)
1 tsp
Butter (optional)
½ tbsp




HOW TO COOK



Rinse quinoa few times and soak in enough water for 20 minutes.Cook in vessel with 1 cup of water for 15 minutes until soft and fluffy and keep aside.

Mean while boil milk in a vessel and add in condensed milk.stir well to dissolve and after 5 minutes add in cooked quinoa.Let it boil for 5 minutes in medium flame and turn off.At this time you can throw in cardamom powder if you like.keep this aside to reach room temperature.

Now wash,peel skin of mango and squeeze out pulp.Add in powdered sugar,mix well.

Now check out quinoa,if its not too hot,pour in mango pulp and stir gently..Refrigerate for some time and serve chilled with the top of sliced nuts of your choice.

Or you can take a cup of quinoa mixture in a bowl,add in mango pulp on top+nuts and serve.both ways looks good/tastes good.
