Spicy Carrot Potato Stir Fry | Aloo Gajar Subzi | Bangaladumpa Carrot Vepudu | Quick and Easy Indian Vegetarian Stir Fry Recipes For Rice and Rotis


This is a simple stir fry which is a very good combination for rice..After started cooking potato,experimenting every time new varieties with it and this is the recent recipe which I tried out last few days back. A simple stir is a very good pair with curd rice specially also,it goes well with rotis too.
You can boil carrot n potato first which saves time while cooking,bu here I cooked directly..Spiciness of the dish is depended on adding red chili powder quantity and it is totally according to your choice.If you use green chili,use less chili powder,other wise it turns damn hot.Better to cook less spice if you are going to serve kids specially.Of course!! they love it surely.

WHAT YOU NEED

Carrot- 3 big
Potato- 4 big

onion-1 small
tomato-1 small (optional)
Green Chilly- 2  small -sliced(optional)
Ginger garlic paste-1 tsp
Turmeric Powder- 1/4 tsp
Cumin Powder- 1/2 tsp

Coriander Powder- 1/4 tsp
Green coriander leaves -finely chopped 2 tbsp 
Red Chilli Powder- 1 tsp
Salt- (According to taste) 
Garam masala- 1/4 tsp
Oil - 1 tablespoon
Asafoetida/hing/inguva powder-2 pinches

cumin seeds-1 tsp
mustard seeds-1 tsp
urad dal/mina pappu-1 tsp (optional)
cloves-2
curry leaves-few





HOW TO COOK

Cut the onion,carrot and potato,tomato in same size pieces.Heat a non stick pan with oil and put the cumin seed,mustard seeds,urad dal,cloves,curry leaves,hing and saute for few seconds.. 

Throw in finely chopped onion,GGP and saute fry for minute. Now throw in potato,carrot pieces and mix well.Add in salt into the pan and cook it for 5 minutes by closing lid..then add red chilli powder,turmeric powder,and combine every thing well.
Add 2 tbsp water, cover and cook it for 4-5 minutes in low flame. Add in chopped tomato,coriander+cumin powders Stir in between to avoid burning in the bottom.Finally add garam masala,coriander leaves and mix it well.Cook for 2 more minutes finally and turn off.
Potato Carrot fry is ready now. Serve hot with rice or chapathi.
