This is a simple rice which is combination of potato and tomato.You can any vegetables of your choice if you like,Instead of regular white rice,this kind one pot meals are filling and healthy too.If you use freshly cooked rice can send this to kids school lunch box too.Try it next time and enjoy..:)


SIMPLE INDIAN RICE RECIPES FOR LUNCH-QUICK AND EASY VEGETARIAN RICE RECIPES

PREPARATION TIME- 20 MINUTES
COOKING TIME- 15 MINUTES


WHAT YOU NEED

Cooked Basmati Rice or normal rice or left over white rice - 1 cup
 potatoes -2 small
Onion -1
Tomatoes - 2 medium size
Salt to taste
Ginger garlic paste -1 tsP
green chillies - 2 small (OPTIONAL)
red chili powder-to taste/1 tsp
Coriander powder -1 tsp
Turmeric powder -1/4 tsp
Garam masala powder -1/2 tsp 

For Popu/seasoning

Oil - 2 tbsp
Bay leaf - 1 (optional)
Cumin seeds/jeera - 1/2 tsp
urad dal - 1 tsp

HOW TO COOK

Wash and soak rice for at least 20 to 30 minutes and cook.Cube potatoes and add them to a bowl filled with water

slice onions and chop tomatoes,add oil to a non stick pan,add Cumin seeds,urad dal  and fry till they turn fragrant.

Add onions and fry till transparent,Add ginger garlic paste and fry till the raw smell goes off.

Add potatoes, salt and cook till they turns soft. Then throw in tomatoes,turmeric,and red chili powder and fry for 2 minutes.pour 1 tbsp water and mix.its helps to avoid burning.

Add in coriander powder and mix once.Now mix cooked rice and stir well. cook for 5 more minutes on a low flame and switch off.Turn off and serve hot with any raita..
