Though rice recipes are not an important posts (to those who feels) The reason behind sharing is to introduce the combination of the vegetables,green leaves with other ingredients..Pulao and biryani recipes are unique where you can`t do any changes in the making process.But,this kind of one pot meals,fried rice recipes the choice goes to the person who cooks.It means can cook in his/her own style by adding different veggies,herbs,lentils or their favorites..


Rice is the main food of south indians.specially telugu people can`t even imagine the lunch without a cup of rice.Nowadays,Iam avoiding rice in the lunch and started taking rotis..But,whenever the rice lefts in the next day morning I prefer to make it one pot meals,so can have it just with plain curd or raita. So,this rice also came out in the same way. Here,I took capsicum as a main vegetable and for a combination added fresh mint leaves.Instead of red chili powder this time thrown green chillies,so the color of the rice is quite pleasant and cool.For growing children this kind of light meals suits for perfect if you serve with curd or even can send in lunch box too if you cook it with fresh rice..Try this combination next time and enjoy..

WHAT YOU NEED

onion - 1/2 cup - chopped

bell pepper - 2 cups - diced
 cooked basmati rice or normal rice  - 1cup (left over rice also can use)
green chillies-2-3
 fresh chopped mint leaves-1 cup
garam masala - 1/2 tsp
turmeric - a pinch
red chilli powder - 1/2 tsp 
salt - to taste

oil - 1 tbsp
cinnamon - small piece
cloves - 2
urad dal(mina pappu)-1 tsp
green cardamom pod-1 small


HOW TO COOK



take the cooked rice in a plate and keep aside..Wash mint leaves thoroughly. Chop onion and capsicum finely.

Heat oil in a non stick pan and add cumin seeds and when they crackle, add  cinnamon ,cloves,urad dal,green cardamom pod,chopped onions,green chillies.
Saute till the onions turn light brown.Then add chopped bell peppers and saute for a couple of minutes.
Add the chopped mint leaves, salt and fry for two more minutes.
Add  in rice and garam masala.mix well and turn off after 2 minutes and serve hot with curd or raita.
