this is a simple pumpkin curry which is cooked with spices and onion.Here we don`t need any typical masalas or ingredients..Even ,It does n`t needed tomato too.If you like can add but I suggest to don`t do it.Because already pumpkin is sweet in taste,so if you have tomato again it turns bit mushy and sweet in taste..
Red chilies in popu which we add in the first step is important for the spice flavor and taste..If pumpkin is available at your place start using it..You can create various recipes even it`s healthy too.I have few more recipes in mind,soon will share one by one.Try this curry and enjoy..:)

WHAT YOU NEED


Pumpkin/Gummadi kaya chopped – 2 cups pieces
Cumin Seeds/jeera – 1/2 tsp
Mustard Seeds/aavalu – 1/2 tsp
Fenugreek Seeds/mentulu – 1/4 tsp
onion-1 small
red chili powder – 1/2 tsp (as per your taste)
coriander powder-1/2 tsp
Turmeric Powder – 1/2 tsp
Salt – To taste
Dry red Chili – 3
Oil – 2 Tbsp





HOW TO COOK


Cut the pumpkin into even sized pieces and chop onion finely.In a vessel take water and add in pumpkin pieces and boil for 5 minutes in high flame and drain them.

Heat a pan and add oil to it. When oil is hot add red chili,urad dal,cumin seeds, mustard seeds and fry till the seeds start spluttering.

 Then add onion,mix and fry for a minute. Now add the cooked pumpkin pieces and mix again. 

Now add turmeric,red chili powder and salt and mix well. Cover the pan and cook on medium flame for 3 minutes.

 Remove lid and mix well. Add in coriander powder and cook in medium flame for 2-3 minutes or till the curry is dry.

 Once all the moisture is evaporated from the curry stir well and transfer the curry to a serving bowl. 

As pumpkin has a sweet natural taste, all the spices which we added enhances the taste of the curry. Serve hot curry with rice or roti.
