Recently I have started using ragi flour in my kitchen.I brought ragi pearls packets in last year india trip.Every time,thinking to use and forgetting as usually..I also prepared home made ragi flour by sprouting ragi and that post also resting in draft still from last 6 months I think..Yupp.That`s looks likes a long time..New recipes are dominating the old ones and every day postponing the old posts..Definitely will share the home made ragi flour post this month..


So,coming to to the recipe this is the muruku which I have tried with home made ragi flour last month..Here,I used basic simple ingredients like salt,black pepper powder,rice flour along with ragi flour..So,what I want say is,it`s a simple recipe without much ingredients and can cook in less than 30 minutes..Muruku process looks tough and takes much time if the quantities are heavy.So,always deep fry them in batch wise and don`t rest the dough for ling time which observes lots oil while frying..Also,Iam not particular about the muruku design plate and shape or the muruku.But,If like can use your favorite achhu and first press them back side of the rice spoon (plastic or steel) and leave them slowly in hot oil. Just a for trail, I cooked this and thought to share the simple method.Planning to make freshly again with different spices this week and of course will share the recipe too.

Roasted chana dal/pottukadalai murukku

Easy murukku with besan flour (chick pea flour)





INGREDIENTS

ragi flour-1 cup
rice flour-1 1/2 -2 cups (I used store bought)
warm water-as need to make soft dough
salt n black pepper powder- as per your taste
hing/asafoetida/inguva powder-2 pinches
white sesame seeds or cumin seeds-1 tsp (optional) (for flavor)
hot oil-2 tbsp
vegetable oil-for deep fry



HOW TO COOK


First add all the dry ingredients to a big mixing bowl .Heat  2 tbs of oil and add it to dry ingredients mixture.
Mix the oil uniformly with the dry ingredients mixture.Divide the mix into 2 parts.

Take one portion of it and add warm water to mix it into a dough. don’t mix all the mixture with water because it takes time to make muruku, and if the dough marinates in water, it uses excess oil when frying. To avoid this,mix the dough two times.

Now heat oil on medium high heat in big kadai for frying.Grease the chakli/muruku press with a little oil.you can use any plate of your choice.
Take a small portion of the dough and place it in the muruku press. Press it and make it into a small round shape.

Put the muruku in the heated oil for frying. You can see bubbling when you add it to the oil.After few minutes, flip muruku.
Wait till it fries completely,Place it on a colander with a kitchen paper towel to absorb the excess oil.

Repeat the same procedure for the remaining dough. Store murukus in an airtight container.Serve with hot tea..
