Bhoona Chicken Fry | Chicken bhuna fry | Quick and easy South indian style chicken stri fry


Bhooning is a very traditional way of stir frying which simple involves semi circular movements,scraping the bottom of the pan each time in the centre.It ensures that the meat becomes well coated and combined with the spice mixture before the cooking liquid is added.
Here I used chicken meat but you can follow the method with mutton meat too..Try it next time and serve hot with chapathi or roti.

PREPARATION TIME- 10 MINUTES
MARINATION TIME-1 HOUR
COOKING TIME- 30 MINUTES


WHAT YOU NEED

250 grams of chicken or mutton boneless 
2 medium size onions
2 tbsp oil
2 tbsp tomato puree or paste
1 tsp ginger garlic paste/GGP
salt-to taste
1/2 tsp turmeric powder
2 cups of water
1 tbsp lemon juice
2 tbsp freshly chopped cilantro leaves
1 tbsp mint leaves
1 fresh red chili,chopped
1 cardamom pod
1 tsp cumin
1 small bay leaf


Remove the excess fat on meat,chop into bite size pieces and wash well.Marinate with red chili powder,salt,lemon juice-1 tsp  and turmeric for 1 hour minimum.cop onion and keep aside.

Heat a woke with oil throw in cardamom pod,cumin,bay leaf and fry onions.Add in GGP,tomato puree and mix well.Fry for 2 minutes or until onions becomes soft.

Now fold in marinated chicken and mix well.Continue the stir fry for 2-3 minutes.add in water,lower the heat,cover the woke with a lid and cook for 20 minutes.

when the water has almost evaporated ,start bhooning over a medium heat ,to avoid burning in the bottom.Do this for 5 more minutes.

Pour lemon juice,cilantro+mint leaves and red chili.Stir to mix and serve hot with roti.
