Thotakura pulusu | Amaranthus leaves Pulusu | Easy south indian pulusu recipes | Quick and easy vegetarian side dishes for rice


Thotakura or amaranthus leaves are one of the finest leafy vegetable which is very healthy and protein packed..Luckily,this is available only in paraguay for us..So,some times get chance to cook new recipes with it.
With Thotakura  can make fry,curry,masala curry and this pulusu often which are very easy and takes less time to cook..This is a simple pulusu  recipe with very less common ingredients and can cook in 15 minutes almost..All you need to do is,making popu/tadka then sauting Thotakura finally adding tamarind juice along with spices,then boiling for 10 minutes..Believe me.This quick and easy dish tastes great with hot white rice if you serve along with any vegetable fry .This is a nice variation to try out with Thotakura instead of cooking regular fry always..Try it next time.

WHAT YOU NEED
Thotakura leaves and stalks -chopped 3 cups(or one bunch)
Green chilli 2
Lemon size tamarind (soaked)
Turmeric powder 1/2 tsp
Red chilli powder 1-1 1/2 tsp

rice flour-1 tbsp+water-3 tbsp
Salt to taste


Popu/tadka:
Oil -1 tbsp
Mustard seeds- 1/2 tsp
Cumin seeds- 1/2 tsp
Urad dal(Gram dal)- 1/2tsp
Channa dal 1/2-tsp
Red chilli 2 (tear into pieces)
Hing pinch
Garlic cloves crushed 2-3 (or ginger garlic paste-1 tsp)
Onion small finely chopped 1 (i skipped)
Curry leaves 10

Preparation
Wash the thotakura and keep it side.Heat oil in a vessel or pan add mustard seeds, cumin seeds let them crack, add urad dal, channa dal fry until they become red, add red chillis, green chillis fry for few seconds, add onion, hing, garlic and curry leaves fry for 1-2 minutes..Here you can also add tomato..

Now add thotakura and salt, Turmeric powder, Red chilli powder and mix well. then add  squeezed tamarind juice and 1/2 cup water and cook with out lid until thotakura becomes soft. 


Mean while mix rice flour in water,make it like fine paste.(this gives a thick consistency to pulusu-but it`s an optional ,you can skip if you don`t like) pour this in the above pan, cover with lid and cook on medium flame for 10 minutes. Make it as a mushed course paste by using a spoon.(it`s an optional) 


if you want again can prepare popu with less ingredients using little bit oil and add to the cooked mixture and combined well.Turn off and serve hot with rice.
