Mutton is a tough and strongly-flavored meat that needs to be marinated and cooked well to bring out its unique taste. After started cooking mutton in my kitchen loving to try new dishes every time..So,this time  I came with another indian popular recipe called red mutton curry.. It is a famous dish from Rajasthan..

Red lamb curry is an exotic dish,savoury gravy, thick and flavourful..  The tender mutton pieces cooked in a spicy yogurt based gravy.  The most important step while cooking mutton is marination. Marinade is a mix of spices used to flavour and tenderize the meat. Yogurt is the best ingredient to marinate mutton along with mild spices and even vinegar also works fine in the recipe.Even, i prefer marination always,but skipped thsi time because of less time and cooked fresh meat directly. this gravy tastes great with rotis and rice too.

WHAT YOU NEED


Lamb meat /goat meat with bones- 500 grams
Ghee /oil -2 tb
Onions - 2 big
tomato puree-1/2 cup or 2 small tomatoes
bay leaf-1 small
Red chilly - 2 n
black cumin-1 tsp

Ginger garlic paste - 1 tb

Salt -to taste
Turmeric powder- 1/2 tsp

red chili powder-1 tsp
Coriander powder -1 tsp
Mint chopped -1 cup
Chopped coriander  leaves -1 cup
Red chilly paste - 2 tb (I used chili garlic paste)
Curd - 1 c


whole garam masala ingredients

staranise-1 small
Green cardamom 2 
Cinnamon -1 inch stick
black pepper corns-5-6
cloves-3


HOW TO COOK

Coarsely Crush the all the whole garam masala in a mortar pestle.

Heat ghee/oil in a pressure cooker.throw bay leaf,onions,GGP, salt and cook it for brown in color, in this add washed mutton,red chilly paste,tomato puree..

Add coriander powder,turmeric,red chili powders, chopped mint leaves, coriander leaves,  add curd..add  enough water and cook until the meat is tender ..

after cooking for 45 minutes, add crushed whole garam masala powder, red chilly and cook for some time.Serve this hot with rice, chapathi.
