Coconut bread is in my to do list from a long time.Finally my dream came true.I baked this on my birthday (june 13th).. Hehehehe...It means one of the very old post..Its almost 3 months,i did n`t touched canon but the draft is fully loaded with old posts.Hope i finish these posts before december 31 st :)
Coming to this recipe , It`s a very healthy bread recipe which is folded with wheat flour,olive oil and milk..The most important,sweetened coconut flakes..I have used store bought packet which is already sweet in taste...This bread is soft and moist with coconut flakes crunchiness.You can refrigerate for one week,also can give a slice as a snack for kids or can send in snack box to school.Totally,a perfect bread to try..
PREPARATION TIME- 20 MINUTES
COOKING TIME- 50-60 MINUTES
Wheat flour-2 1/2 cups
vanilla essence-1 tsp
cinnamon powder-1 tsp
baking powder-2 tsp
sweetened coconut flakes-1 1/2 cup
olive oil-6 tbsp
milk-1 1/4 cup
HOW TO BAKE
In a mixing bowl break eggs,add in oil,vanilla essence,
milk and mix well..
Add in sugar,cinnamon powder,salt,baking powder,coconut
flakes and flour..Combine every thing to get a fine batter.
Now pre heat oven at 200 degree C.Clean a baking tin or
oven proof glass bowl,apply oil evenly ,dust it with
flour,pour in batter and tap tin on floor to set batter well.
Place bread batter tin in oven,bake for 1 hour or until it done.
check out tooth pick or knife.if it comes out clean,bread is
ready. Serve warm with hot milk or coffee..
You can use all purpose flour instead of wheat flour.
You can use butter instead of sugar.
You can skip cinnamon powder.
You can use 1 tsp soda+1 tsp baking powder instead of 2 tsp baking powder,for fluffy texture.
