Mutton Dalcha is an Indian dish which is popular in Hyderabadi cuisine.It is folded with mutton, chana dal and tamarind juice mainly. It is the most common dish made in hyderabad which has been passing on since the Nizam’s era.
It is a very good combination with Bagara rice. Adding meat with bones in the Dalcha gives a very good taste as the juice extracted from the bones and mixed into the daal brings out a very good taste in the dish.. So,Here is the simple recipe for how to make dalcha.

WHAT YOU NEED

Mutton - 1/2 kg
  • Gram lentils/ senaga pappu -3/4 or  1 cup 
  • Tamarind juice - 1/2 cup
  • Tomatoes -1 or 2 big (chopped)
  • Onion -1 big (chopped)
  • Ginger garlic paste/GGP -  2 tbsp
  • Red chilli powder - 1 tbsp
  • Turmeric powder - 1 tsp
  • Meat masala powder - 1 tsp
  • Salt to taste
  • Cumin +coriander powder - 1 tsp + 1 tsp
  • Oil - 1/4 cup
  • cumin seeds -  1 tsp
  • cloves -3
  • cinnamon stick -1 inch
  • staranise - small
  • green cardamom -1 big
  • Cilantro leaves -2 table spoons

HOW TO COOK


Wash the mutton twice,add salt, red chilli powder, garam 

masala, meat masala powder, 1 table spoon ginger garlic 

paste,turmeric powder..Mix well and marinate for over night 

or 2 hours.

Wash and soak dal for 15-20 minutes..Pressure cook for 2 

whistles and keep aside.. Soak tamarind and squeeze out the 

juice..Chop onion,tomato and keep aside..

Heat oil in a pot or pressure cooker and add chopped onion, 

ginger/garlic paste, marinated meat,chopped tomato and 

water.Leave it to cook for 20-25 minutes in medium flame.

When the mutton become tender, add tamarind 

juice,pressure cooked dal  and leave to cook for 2, 3 minutes 

without lid.Now,add cumin powder,coriander powder and 

cilantro leaves.

Delicious Daalcha is ready to be served hot with rice or roti.
