Brinjal/Eggplant/vankaya/Baingan is one of the best and favorite vegetable for many of the people..I like to make brinjal chutney,uses in sambar and some times prepares pulusu..But,I don`t like brinjal in curry so,tries to cook it with different additions to add in our daily menu..
This is a simple dry curry which is a perfect pair for rice..This hot and spicy curry is folded with roasted chana dal powder which gives a nice,rich flavor to it..You don`t need red chili powder in this because the red chillies which we use gives a hotness to the dish..Over all,It`s an easy yet healthy subji to cook and serve with rice..Check out some more brinjal recipes here...
PREPARATION TIME- 15 MINUTES

WHAT YOU NEED
cumin seeds-1 table spoon
coriander seeds-1 table spoon
green chilli-3 (I skipped)
ginger garlic paste-1 tea spoon
turmeric powder-1/2 tea spoon
Wash brinjal,cut into 1"inch size pieces,soak them in salted water,until to cook to avoid turning into black color.Mean while dry roast red chillies,cumin seeds,coriander seeds then take all into mixy jar..Instead of coriander seeds,added coriander powder in mixy jar before grinding. Add roasted chana dal into it and grind into fine powder..
Now heat a pan with oil,throw the tadka Ingredients,saute for few seconds.Add chopped onion,green chilli,ginger garlic paste and fry for a minute..Now add chopped brinjal pieces and mix every thing.
Add salt,turmeric powder and cook for 5 minutes in medium flame,until brinjal turns soft..Add in ground masala powder,stir once,close with lid,cook for 10 minutes in low flame.Stir in between to avoid burning in the bottom or add a table spoon of water..
