Chocolate Jam Cupcakes | Jam Filled Cupcakes | Jam Chocolate Cupcakes | Choco Jam Cupcakes For Break fast


These are yummy chocolate cupcakes with jam filling..Adding jam in cupcakes recipe is an innovative idea which I got and worked out well too.You can add any of your favorite jam but here I used grape jam which is lied down in fridge for so many days...The recipe calls for 3 eggs actually,but I used 2 big eggs and totally cupcakes came out perfectly..
So,adding eggs 2 or 3 is your choice..Always use good branded cocoa powder for best flavor and in this recipe you can also add chopped  chocolate for rich chocolate taste which is an optional..I baked these in the evening time and clicked on the same day.That`s why there was no good light in pictures but i hope you can see the clear texture in below picture...Another variation in this recipe is I used silicon rubber muffin sheet to bake the cupcakes which is heart shapes..Are n` t they looking cute?? Try the recipe in this weekend and surprise your kids..

WHAT YOU NEED
2 big eggs Or 3 medium size
1/2 cup - vegetable oil
1 teaspoon - vanilla extract
1 - all-purpose flour
1/2 cup - unsweetened cocoa powder
1 cup - white sugar or brown sugar
1 teaspoon - baking powder
1/2 teaspoon  -baking soda
1/4 teaspoon - salt
1/2 cup - grape Jam or your choice


HOW TO BAKE

Preheat oven to 375 degrees F (190 degrees C). Line 12 muffin cups with paper liners.


In a large bowl whisk together the eggs,oil,jam and vanilla extract. 

In another large bowl whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Stir in the chopped chocolate if you are using..

With a rubber spatula fold the wet ingredients into the dry ingredients and stir only until the ingredients are combined.Do not over mix the batter or the muffins will be tough.Using an ice cream scooper, evenly fill the cups cake liners with the batter..Place in the oven and bake until a toothpick inserted in the center of a muffin comes out clean, about 20 -25 minutes.

Let cool for about 10 minutes and serve warm with hot cup of coffee or milk.
