I have posted lots and lots rice recipes in MLH like pulao`s, biriyanis,one pot meals,left over rice recipes and fried rice recipes etc.. Though every time I think to avoid to share rice recipes,my creations pulls me to click and then straight to blog.. Hehehehe!!! I have already told so many times that I love herbs like cilantro and mint which  are freshly available here in my place..

Also,I have already posted rice recipes like cilantro pulao,mint pulao, mint cilantro fried rice,mushroom mint pulao,mint cilantro peanut rice and many more.. This recipe also similar to the remaining recipes except the addition of coconut milk.. Coconut milk is the important ingredient in this pulao which gives a rich taste to the pulao.. Overall,It is a simple and healthy pulao which is a good meal for lunch..

PREPARATION TIME-20 MINUTES
COOKING TIME- 30 MINUTES



WHAT YOU NEED

1/3 cup chopped onion
1/2 tsp turmeric powder
2 cups basmati or normal rice
1/2 tbsp oil + 1/2 tbsp ghee
200 ml or 1 cup coconut milk
4 cloves +1″ cinnamon+1 green cardamom pod+1 bay leaf+1 tsp fennel seeds
salt to taste
bay leaf-1
cashews-5
To make a paste
1/4 cup chopped coriander leaves
1/2 cup chopped pudina/mint  leaves
3-5 green chilli
1 tsp ginger garlic paste/GGP
1/3 cup chopped onion, chopped
1 tea spoon cumin seeds
1/3 cup fresh coconut pieces or coarse powder



HOW TO COOK


Make a fine paste with mentioned ingredients and keep this aside.wash rice twice and soak in water for 30 minutes.
Heat oil+ghee in a vessel, add in whole spices and saute for half a minute. Add in chopped onion and saute for a minute. Add in ground green paste.Saute for another 5 minutes in low flame.
Now add in coconut milk,washed rice and enough water (3/4 cup of water) and bring to a boil. Reduce heat and cover with lid and cook till the rice is done.serve hot with raita or curd.
