Normally I cook white rice for lunch, some times pulao.. Though I have posted many paneer recipes in blog missed posting paneer pulao.So,last week for lunch when I cooked this clicked some pictures.. We cook this pulao along with coconut milk which gives a pleasant white color to the rice..This pulao is delicious and appetizing if you serve with spicy gravy.
Add few roasted cashews to the paneer pulao that will make this simple dish special. It is great for lunch time when you do not want to cook anything big. You could also send this for lunch box .Finally,serve hot always with some side dish and curd raita..

WHAT YOU NEED

1 cup paneer cubes/ricotta cheese
1 tsp ginger garlic paste/GGP
1 tsp black pepper corns
1 cup basmati or normal rice
1/2 tbsp oil + 1/2 tbsp ghee
4 cloves +1″ cinnamon+1 green cardamom pod+1 bay leaf+1 tsp fennel seeds+1 tsp cumin+1 bay leaf 
salt to taste
1/4 cup chopped coriander/cilantro leaves
1/2 cup chopped pudina/mint leaves
3-5 green chilli
1/2 cup coconut milk
1/2 tea spoon kasoori methi powder
1 medium size onion, chopped



HOW TO COOK


wash rice twice and soak in water for 30 minutes.Boil paneer for 10 minutes in medium flame,drain and keep aside.
Heat oil+ghee in a vessel, add in whole spices and saute for half a minute. Add in chopped onions,saute for a minute.Then add paneer,ginger garlic paste,green chili and saute for 5 minutes. Add in paneer cubes and saute for another 5 minutes in low flame.
Now add in coconut milk,cilantro leaves,mint leaves and mix well.Add salt,kasoori methi,washed rice+2 cups water and bring to a boil. Reduce heat and cover with lid and cook till the rice is done.serve hot with Curd Raita Recipes
