PREPARATION TIME- 20 MINUTES
COOKING TIME- 45 MINUTES

Ingredients:
Mutton with bones – 1/2 kg
Onion – 1 big, chopped
Ginger – 1 inch piece, chopped
Coriander leaves – 2 tbsp, chopped
Green chilli – 2, sliced
Clarified butter (ghee) – 3 tbsp
oil-1 tbsp
Garlic – 3 to 4, coarsely chopped
Wine vinegar – 3 tbsp or lemon juice-2 tbsp
Warm water – 1 cup
Tomato – 1 big
red chili powder-2 tsp
salt-to taste
turmeric powder-1 tsp
coriander powder-1 tsp
garam masala-1 tsp
Whole garam masala
Cloves – 4
Black peppercorns – 10
Brown cardamom – 2
cumin seeds-1 tsp
fennel seeds-1 tsp
cinnamon stick-1 inch
staranise-small

For paste:
Sesame seeds – 1 tbsp
Mustard seeds – 1 tbsp
Bay leaf – 1
Poppy seeds – 2 tbsp
Cinnamon – 2 inch piece
Dried red chillies – 4
Cloves – 4
Black peppercorns – 10
Brown cardamom – 2


Method:
1. Wash and cut the mutton into pieces.
2. Grind the spices to form a smooth paste and rub it over the mutton. Marinate overnight.
3. In a pressure cooker, heat the oil,add whole garam masala and saute the onions in it.
4. Add the ginger garlic paste, salt and fry.
5. Now put the mutton and add spice powders.. Then add chopped tomato and pour in the water and bring to a boil.
6.  Cover and cook until meat is tender,around 45 minutes in medium flame.
7. Finally add garam masala,coriander leaves and simmer for 3 to 4 minutes.
8. Serve hot with chapathis,onion slices and lemon wedge.
