Beetroot is our couple favorite so I try various recipes like juices,curries and some times by folding with rice.this is a healthy rice with mint combination along with common spice powders..For kids lunch box or if you have some left over rice can try this..

Adding mint and cilantro like this, is very good for our health too.I prefer this kind of rice for lunch mostly  because can have this rice with some curd or raita so, no need to cook any curry or any gravy..Try this one pot meals and serve with any raita..

WHAT YOU NEED

beetroot-1 big
oil-1 table spoon
mustard seeds-1 tea spoon
cumin seeds-1 tea spoon
dry red chili-1
onion-1 small size
ginger garlic paste-1/2 tea spoon
salt-to taste
red chili powder-1 tea spoon
garam masala-1/2 tea spoon
mint leaves-1 cup

HOW TO COOK
Peel beetroot skin,chop into pieces.Ground into coarse paste.Heat  a non stick pan with oil,throw mustard seeds,cumin seeds,red chili,chopped onions,ginger garlic paste.Saute a minute,add in coarsely ground beetroot. Saute for 2 minutes,add salt,red chili powder,garam masala,finely chopped mint leaves..Mix and cook for 5 minutes in low flame.Add in rice,mix carefully.Cook for 2-3 minutes and turn off.Serve hot with curd or raita..
