I may never stops baking cakes because it became like a hobby so baking, at least once in a week these days..Mostly I bake different types of chocolate cakes and breads which my boys likes and loves to take it as a snack to school..Few weeks back while baking a chocolate cake for kids,thought to use dates which are in fridge silently.
There was no eggs in my hand on that day,so this is the egg less which I have baked..I must say that this is one of the best egg less cake that too with dates..I suggest to use wheat flour which is more healthy when compared with all purpose flour..Soaking dates in hot water for long time gives the best result,but mixing cake batter well is the most important step before baking.. Because,for the perfect texture inside have to mix the whole batter carefully to mix all the ingredients evenly..You can serve this for breakfast or like an evening snack also goes well.Egg haters,allergic people and Vegetarians can bake this guilt free date cake and enjoy.

WHAT YOU NEED
All purpose flour-1 1/4 cupDates-chopped -1 cup tightly packed
Cinnamon powder-1/2 tea spoon
Sugar-1/2 cup (1/3 cup is fine)
Oil-1/2 cup
Hot water-1 cup
Vanilla essence-1 tea spoon
Baking soda-1/2 tea spoon
Baking powder-1 tea spoon
Salt-1/2 tea spoon
Walnuts-1/2 cup/chopped

HOW TO BAKE
Preheat oven at 200 degree C. Apply oil to oven safe bowl or baking tin,dust with flour..Take the chopped dates in bowl add water.Soak for 15 minutes..Mean while in a mixing bowl take flour,soda, baking powder, salt. mix every thing.in other bowl add oil,sugar mix until sugar dissolves.Add soaked dates mixture,mix well. Now pour this in flour mixt- ure.Combine every thing,finally add chopped walnuts. stir every thing once again and shift into oven safe bowl or baking tin.Place this in oven,bake for 40-45 minutes.Check out with tooth pick,if it comes out clean turn off oven..Let it cool and serve a warm slice with coffee or tea.
