Punjabi food is wholesome and full of rustic flavour. The dals are a speciality of this cuisine, made of whole pulses like black gram, green gram and Bengal gram. Their dishes are simply delicious.

Usually they prefer tandoori style cooking which is healthy way of cooking which is not only easy to digest,but also very hygienic. Coming to this recipe, it is an excellent Dal which is folded with Chann Dal, kidney beans and Urad Dal (black dal).. Specialty of this dish is using whole urad dal means dal with skin which is more healthy and protein packed.. I add a dollop of low fat cream in the final of the recipe which enhances the taste of the dish..Overall,this Dal maharani recipe is a wonderful mixture of various lentils and very tasty with hot white rice and roti.and I didn't put in butter because I was making dinner but If you like can add a dollop of butter in the final instead of cream for rich taste..

WHAT YOU NEED
Chana daal -1 cup
Rajma/red kidney beans- 1 cup
Black gram daal/whole urad dal -1 cup
Oil-2 tb
Red chilly- 2n
Bay leaves -1 n
Onion chopped -1 medium size
Salt-to taste

Ginger garlic paste-1 tsp
Chilly powder -1 tbsp
Tomatoes chopped - 1 cup
Coriander powder- 1 tsp
Cumin powder -1 tsp
Kasoori methi -½ tsp (i forgotten)
Garam masala-1 tsp
Fresh Cream 2 tbsp

HOW TO COOK
Before night wash two dals,rajma 2-3 times and soak rajma, black gram daal, chana daal over night or 8 hours at least Pressure separately or by mixing three dals for 3-4 whistles or around 15 minutes in medium flame with enough water..
Heat oil in a pan add red chilly,cumin seeds, bay leaves, chopped onions,ginger  garlic paste,salt, cook the onions are till golden colour, add chopped tomato,mix once.Add red chilly powder,turmeric stir and cook for 2 minutes in medium flame until tomatoes mushy.Add in pressure cooked  rajma, black gram daal (soak over night) chana daal and mix every thing..Cook for 5 minutes.Now add coriander powder, cumin powder,kasoori methi, garam masala, add some water and cook this for 10 minutes in low flame by closing with lid  Add cream in the final and turn off.Serve hot with roti or naan.
