You may all know that I love rice lot also,posted many recipes already in blog.This is an another recipe which is adding in list..It is a simple rice to make even you can cook this with left over rice..
Combination of pudina and pepper is really nice which worked out very well..Instead of eating white rice daily,this kind one pot meals are healthy and filling too..When you have left over rice try this variety and enjoy with curd or raita.:) 🙅🙅😋

PREPARATION TIME- 15 MINUTES
COOKING TIME- 15 MINUTES

WHAT YOU NEED

Left over rice -2 cups
mint leaves-tightly packed - 1  cup
black pepper powder-1 tea spoon
fresh coconut/coarsely ground -1/2 cup
onion-1 small
Ginger garlic paste/GGP-1 tea spoon
cumin seeds-1 tea spoon
mustard seeds-1 tea spoon
curry leaves-few
chanadal-1 tea spoon


HOW TO COOK

Take mint leaves,pepper powder,coconut in mixy jar and grind into coarse paste..Heat oil in non stick pan,saute cumin seeds,mustard seeds,curry leaves,chanadal. Then add chopped onions,GGP saute a minute in high flame Now add ground paste,salt as per taste cook for 2-3 minutes in medium flame and add rice.Mix well, cook for 2 -3 minutes.Finally throw some more pepper powder on top,stir and serve hot with curd or raita.
